We will eat longevity noodles during the New Year’s Eve dinner because it has a very good meaning. Eating longevity noodles represents our wish to live a long life. But the noodles we eat are not clear soup noodles, but braised noodles. When we make braised noodles, we add a lot of seafood to the braised noodles, such as shrimps, scallops, oysters, sea cucumbers, squid, etc.

Lychee meat is a delicacy made from pork. When we make lychee meat, we buy a piece of lean meat and then cut the meat into thin pieces. After that, we will put some oil in the pot, and when the oil is hot, we will put in the meat and fry it. When the meat is fried and crispy, you can pick it up. We eat fish during New Year's Eve dinner.
