Hu spicy soup is so delicious, why can’t it make its way out of Henan?

Hu spicy soup is the most famous breakfast snack in Henan. Most people in Henan grew up drinking this bowl of soup and have a deep affection for spicy spicy soup. Especially in China, where spicy soup is already on the lips, many friends from Henan also want to see friends from all over the country drink this delicious soup.

But in reality, Hu spicy soup is only sold in Henan. Shaanxi also has Hu spicy soup, but it seems to be different from Henan.

China on the Bite of the Tongue, why can’t the top delicacy hot soup be sold in Henan?

Why can’t Henan hot soup be sold in Henan, and why can’t it be seen at breakfast stalls in other places?

As a southerner, I have lived in Xiaoyao Town, the birthplace of spicy spicy soup, in the Zhoukou area for 6 years. I often travel around different provinces and objectively analyze this reason.

When I first went to Zhoukou, I was worried about what to eat early every morning. The local breakfast varieties are not as rich as those in Guangdong. The most common ones include hot soup, sesame cakes, steamed buns, seaweed, shrimp and egg soup, fried dumplings, etc.

I think local friends like to order a bowl of pure hot soup, or a mixture of hot soup and tofu, and then order a dozen fried dumplings to eat with relish.

But the appearance of hot soup makes it difficult for people who have never eaten it to increase their appetite. In front of those small shops, a large pot of thick hot soup looks a bit like "dark cuisine". As a friend from my hometown said, looking at it is unappetizing and reminds people of bad things.

Generally there are kelp, diced beef, ham, diced pork, day lily, bean skin, gluten, peanuts, etc. At first I couldn't stand hot soup, so I would rather drink seaweed, shrimp and egg soup than hot soup. The seaweed, shrimp and egg soup is actually not very delicious, but compared to the spicy flax soup, its soup color is more acceptable to the senses.

However, when I was in Zhoukou, I often went to the countryside for running. Not all breakfast stalls in town have egg drop soup. No choice but to try the hot soup a few times.

After drinking the spicy flax soup, I felt that although the spicy flax soup was not very appetizing, it tasted good, much better than egg soup. The characteristic is that a few drops of sesame oil are added to make it slightly spicy as soon as you enter it. It should be caused by chili pepper. Since it is a hot soup, it is natural to put chili pepper in it. After drinking it, I felt a little fragrant in my mouth.

After drinking spicy flax soup a few times, I no longer judge people by their appearance, and I refuse spicy flavourful soup based on appearance. In the next few years, I often drank spicy soup. But I have never fallen in love with Hu’s spicy soup since then, for the following reasons:

After all, Hu’s spicy soup was a delicacy in Henan at that time. The taste of this food is deeply ingrained in the hearts of the locals, who have been drinking it since childhood. They have a deep affection for hot soup, I don't. Because, like the locals, I also have a soft spot for the food in my hometown, and I also think they are the best.

This is a eating habit belonging to a different place, and everyone has a hometown complex. Since there is no local custom of eating hot soup, many people will naturally not fall in love with this foreign delicacy.

In addition, compared to other local cuisines, there is no reason why people must choose hot soup.

Let’s talk about Guangdong. Guangdong gathers friends from all over the world. The local food is also recognized by many friends from different places. Many people will miss the local food after leaving Guangdong. But that's it. Many delicacies in Guangdong are not available everywhere.

In Henan from 2011 to 2017. At that time, the price of spicy spicy soup ranged from 3 to 7 yuan. Different places and stores use different materials, resulting in different prices. In Guangdong, there are various kinds of jellyfish at the same price earlier. Soup noodles and rice rolls are the most common ones.

A bowl of porridge now costs 6 yuan, which should be cheaper than a few years ago. This kind of porridge is a bit like hot soup, the porridge is cooked very thick. However, this porridge soup is milky white and looks very appetizing. All kinds of pig meat are fresh on the same day and have a light taste. More suitable for people like me who like to eat light food in the morning. There are also rice rolls and noodle soup, which are also bland.

These three breakfast foods are available throughout Guangdong and have not been promoted in other places. One reason is the local eating habits mentioned above, and the other reason is that there are similar local versions.

Let’s take my favorite pig porridge as an example. In fact, Fujian has a lot of porridge in the morning, and there are also noodle soups such as yellow croaker noodles in Jiangsu and Zhejiang. Flour is used in different places, flour is used in one place. However, they are similar in taste and light. Speaking of places with strong tastes in the southwest and northwest, the locals also have their own version of the food.

For example, Hubei’s hot dry noodles, Jiangsu’s duck blood vermicelli, Lanzhou’s beef noodles, Shandong’s mutton soup, etc.

Conclusion:

Hu spicy soup is a traditional breakfast food in Henan, which does not mean that it is not unpalatable to drink.

But each place has its own unique food. Hot soup does not have the price advantage like steamed buns and fried dough sticks. When colliding with local cuisine, most people will choose the familiar rather than the exotic, which also has something to do with people's hearts. Most people have a high level of recognition of food from their hometown and are not used to the taste of food from other places (especially the spicy spicy soup that is commonly sold).

The only breakfast foods are domestic products, soy milk and fried dough sticks. It’s just steamed buns, which vary from place to place. For example, buns in the north are thick and big, while buns in the south are thin and small.

Finally, I actually had the best spicy spicy soup in Henan, not in a restaurant or stall, but at a local farmer’s house.

They use a lot of ingredients to make spicy flax soup, such as fungus, ham, day lily, beef, etc. The most important thing is that the spicy sesame soup they sell is clear in color, not as dark as the ones sold outside. However, it was very difficult to do this and it took them several hours to complete.
