Northern folk cuisine: how to make distilled vegetables

In order to control sugar, fat, and regulate the gastrointestinal tract, in our recent dietary formula, we have gradually reduced the staple food and increased the number of vegetables, and we have returned more and more to the state of eating glutinous vegetables.

It is necessary to eat more vegetables and less grains, but also to ensure a certain taste, which requires a lot of thought and effort in specific methods. Therefore, the hometown's preserved recipe - distilled vegetables, was once again served on the dining table.

Distilled vegetables are a food commonly eaten by northerners.

In the early years, because there was not enough food to eat, a method of making coarse grains and fine grains was invented in order to keep the belly full.

In recent years, people have become tired of eating good food, and distilled vegetables have regained the market. Even on the tables of luxury hotels, distilled vegetables can be seen everywhere.

In my hometown, the common ingredients used to make distilled vegetables are sophora japonica, long beans, noodles, broom vegetables, etc.

When I came to Hainan, these ingredients were not easy to find, so I came up with the idea of ??Hainanese revolutionary dishes.

Hainan's revolutionary vegetable is actually a type of wild chrysanthemum, also known as Annan grass, which is a wild vegetable that grows all year round.

"Compendium of Materia Medica" records: Chrysanthemum chrysanthemum "relaxes qi, nourishes the spleen and stomach, eliminates phlegm, and benefits the intestines and stomach."

A few days ago, I posted a brief article titled "Revolutionary Dishes Eaten by Qiong Cai Lu". The article mentioned distilled vegetables, and some friends expressed curiosity and interest in knowing how to make this dish.

So today, I will write down the steps. After all, it is something I have experienced and done myself, so it is not difficult.

The first step is to pick and wash vegetables. This is the same process as most vegetables.

Step 2: Drain and dry. This step is very critical and almost equal to the key point.

Step 3: Cut the completely dried green vegetables into 1-2 cm long pieces for easy mixing with flour.

Step 4: Put the chopped green vegetables into a clean basin, sprinkle with appropriate amount of flour, and stir while sprinkling.

This step is also the key point. You must have the right amount of flour. If you add too much flour, it will easily form lumps. If you have too little flour and too many vegetables, it will not work.

Therefore, the dosage of flour must be controlled well.

At our age, we all rely on experience, feeling, and eyesight. Besides, different dishes absorb flour in different ways, which is difficult to quantify.

Step 5: After mixing the flour, sprinkle with an appropriate amount of salt. This is also an appropriate amount, depending on the amount of the dish and personal taste.

One more thing to add here is that before mixing the flour, a small amount of chopped green vegetables should be set aside as the bottom of the pot, that is, placed between the drawer cloth and the mixed flour vegetables to prevent the vegetables from sticking to the drawer cloth.

Step 6: When the water is boiled to 50 or 60 degrees, spread the mixed vegetables evenly on the basket.

The order is to spread the drawer cloth first, followed by the dishes that have not been mixed with flour, and the dishes that have been mixed with flour are spread out last.

Step 7: Turn on high heat for 15 minutes, then change to medium to low heat for 3-5 minutes, then the pot is ready.

As a reminder, during the cooking process, you need to open the lid and stir once with chopsticks to avoid fish inclusions.

Step 8: Season the garlic according to your personal taste, and drizzle with a little sesame oil. It will be best when the vegetables are warm and cool.

At this point, all the steps for making boiled vegetables have been introduced. If it can be of some help to my friends and they can follow these steps to make delicious and healthy boiled vegetables, then the purpose of writing this article will be achieved.
