In the hearts of Huaibei people, it is also what outsiders want to taste when they come to Huaibei. What are the most authentic delicacies?
Speaking of Huaibei, some friends may not know much about it. It is located in Anhui Province, north of the Huaihe River. There is a city called Huainan to the south of the Huaihe River, which is my hometown.
Although Huaibei is a small place, it has a long history of more than 4,000 years and is an ancient cultural city.
Today we are not going to talk about history, culture and economy, but just what authentic local delicacies are worth tasting.
First, I think the name Kouzijiao will be familiar to both those who drink and those who don’t.
It is the representative of Chinese mixed-flavor liquor. The hometown of Kouzijiao Liquor, Suixi Kouzi Town, has a 2,700-year brewing history.
To describe the taste of Kouzijiao Liquor in twelve words, it is "a magnificent aroma spectrum, a mouth-feeling mouthfeel, and a long aftertaste."
2. Wanghanzi Camellia oleifera is available in many places, just like beef soup, but Huainan beef soup is unique.
Wanghanzi oil tea is sour, spicy and delicious.
It's a little mushy, a little greasy, and has a strong aroma of ghee.
Local people often say that "the oil tea in the old city is fragrant, both beautiful and delicious."
Wang Hanzi's original name was Wang Xincong. He devoted great love to food, studied carefully and listened to the opinions of diners. In the end, he became a household name and named Camellia oleifera after his nickname.
Camellia oleifera is just a street snack, not really available in big restaurants.
The oil tea is put in a large pot and wrapped in cotton cloth to keep it warm.
If the customer asks for it, the store will pour you a bowl. Usually we serve it for breakfast, with fried dough sticks, it tastes really good.
When eating, you can add vinegar, soy sauce, sesame oil, etc. according to your preference. 3. Dingjiazhuang Steamed Bun Dingjiazhuang Steamed Bun is now a municipal cultural heritage.
Today, it is the fifth generation and has a history of more than 200 years.
Dingjiazhuang buns are round, golden in color, about 35 cm in diameter and 3 cm thick.
It is famous for its "pure color and taste, crispy and delicious".
This steamed bun is extremely hard, and you have to chew it slowly in your mouth to taste the earthy aroma of wheat.
4. Linhuan sesame cakes are actually pastry sesame cakes. They are available in many places, including in my hometown of Huainan. Whenever I walk by a sesame cake stall and smell the aroma, I can’t help but stop and buy one.
The main raw materials of sesame cakes are flour, lard, sesame, chopped green onion, salt, etc.
The sesame cakes are semi-risen. The pastry in the middle is not only filled with lard and green onions, but also mixed with oil. The surface is sprinkled with sesame seeds.
After roasting, well, you will miss the aroma if you don’t eat it for three days.
When eating, you have to use your hands to catch it, otherwise the residue will fall off. The surface is fragrant and crispy, and the inside is soft and elastic.
Linhuan Shaobing is excellent in color, aroma and taste, and it also has a beautiful love legend.
In the past, women were not allowed to eat at the table. After the men finished eating, they could only eat some leftovers. The husband felt sorry for his wife, so he secretly took a steamed bun.
But the steamed bun became very hard after it cooled down, so they lit a bonfire to bake it.
After some back and forth, my wife discovered that it tastes better if you put some condiments on the steamed buns and bake them.
Later, the couple set up a stove and sold sesame cakes.
In addition to sesame cakes, Linhuan Ancient Town also has Linhuan braised pork belly, Linhuan braised melon with soy sauce, and Linhuan mutton soup, all of which are well-known local delicacies.
The article is a bit long as I write it on, so I will write down the names of the delicious ones first and introduce them in batches later.
