I have tried many times to make crispy pancakes at home, but I can never get the essence of multigrain noodles. I don’t know if it’s because of the pot or the recipe is not accurate enough. Most of the pancakes with multigrain noodles are based on mung bean noodles.
It is made by mixing flour, soybean flour, and cornmeal. The batter is thin and crispy when spread on the stove. It makes people greedy when they look at it. I have always thought that the master who makes multigrain pancakes has real skills. This technique is really learned.

I simply don’t worry about the crispiness anymore. I made pancakes with multi-grain flour once in the past two days. I put some side dishes in them and it tasted very thin and crispy. The more I ate, the more I wanted to eat them.
?Ingredients required for multigrain noodle pancakes and fruit: 320g of ordinary flour, 40g of cornmeal, 80g of multigrain noodles, 550g of water. Side dishes required: lettuce, dumpling wrappers, green onions, mustard, ham sausage, spicy strips, eggs, black pepper
Tools required for sesame seeds: scraper, electric baking pan/pan ※Step 1: First, we make the batter for pancakes. Mix the flour, multi-grain noodles and water together. I use the multi-grain noodles here.
It is mixed with black beans, sorghum, black beans and other grains. If it is not available, it is best to use an equal amount of mung bean noodles or soybean noodles instead.
※Step 2: Stir with chopsticks first, then stir with an egg beater for a while. The mixed state should be a fine, sticky and particle-free batter. Set it aside and let it rest for 20 minutes.
※In step 3, you need to make the inside of the pancakes crispy during the baking time. Here we can just use dumpling wrappers instead. Stack the two dumpling wrappers together, roll them out with a rolling dough, and roll them out as thin as possible.
The thinner the better, the crispier it will be when fried. After rolling out, you can see your fingers through the dumpling wrapper, but the force should be even and do not break the dumpling wrapper.
※Step 4: Heat the oil in the pot. When it is 60 to 70% hot, use clean and dry chopsticks to place it in the oil pot. Dense small bubbles will appear. The oil is warm enough. Put in the dumpling wrappers and they will float immediately.
Turn over, change to medium-low heat and fry until golden brown, then remove the oil and take it out. The fried crisp will be especially crispy and delicious.
※Step 5: Preheat the electric baking pan or frying pan in advance, brush with oil and turn off the heat. Pour in an appropriate amount of batter and use a scraper to spread it completely. The thinner here is the better. Then turn on the heat and wait until you see the bottom surface solidified.
Just break in an egg, break it up with a scraper, sprinkle in chopped green onion and black sesame seeds, fry until the egg liquid is cooked, put lettuce, ham, pickled mustard, spicy strips, crisps on top, roll it up, it will be hot when you roll it.
Be careful, I didn’t add extra sauce, friends who like it can apply some sauce.
Now it’s time to eat. The outer shell is very chewy and there are many side dishes inside. Especially the crispy and spicy strips are really the soul of this pancake fruit. It’s super delicious.
