The skewers are charred on the outside and tender on the inside, and sizzling when you take a bite. Paired with a few bottles of beer, it's really comforting!
However, grilled skewers may seem simple, but if you want to make them taste good and praiseworthy, you still need the support of recipes and techniques.
I happened to have a senior chef who has been operating a barbecue restaurant for 23 years next to me. He shared with us some secret recipes and techniques for marinating, sprinkling ingredients, baking powder, barbecue sauce, etc. about barbecue.
1. Marinating recipe for meat skewers Marinating recipe 1: 2.5kg mutton skewers (cut into square pieces about 3cm), 200g cumin powder, 200g garlic, 150g chili powder, 250g green onions, height
100 grams of white wine and 50 grams of salt.
After mixing well, marinate at low temperature overnight.
Marinade recipe 2: 500 grams of mutton (leg meat is best), 15 grams of refined salt, 5 grams of pepper, 50 grams of sesame seeds, 3 grams of cumin, 5 grams of cumin, 5 grams of pepper powder, 15 grams of flour, and a little chili powder

Knead and mix well, then marinate for more than 3 hours.
Marinade recipe 3: 500 grams of mutton, 15 grams of refined salt, 5 grams of pepper, 50 grams of sesame seeds, 3 grams of cumin, 5 grams of cumin, 5 grams of pepper powder, 15 grams of flour, and a little seasoning (chili powder).
After mixing well, marinate at low temperature overnight.
2. Chicken wings, chicken legs, and duck wings marinated recipe: 90 grams of spicy and smelly dry ingredients, 40 grams of refined salt, 50 grams of MSG, 40 grams of Special Fresh No. 1, 40 grams each of green onions and minced ginger, 20 grams of loose meat powder, 10 grams of sugar, cooking wine
50g, 200g cornstarch, 20g chicken essence, stir evenly and marinate for about 1 hour.
(The meat raw material is 5 kilograms, which can be reduced proportionally for home use).
3. Baked powder recipe Marinating can be said to be very simple, but during the baking process, the powder ingredients are also very particular.
Barbeque powder recipe: 50g cumin powder, 60g Wang Shouyi spicy fresh food, 10g salt, 100g soybean noodles, 20g chicken powder, 50g chili noodles.
Salt formula: 360g salt, 100g MSG, 40g meat gem, 40g ethyl maltol, 200g cumin powder, 200g chili noodles, 400g spicy fresh food; vegetable baking powder: 500g red starch, 1500g refined salt, MSG (
Fine powder) 400g, 2 packs of Special Fresh No. 1, 420g Shisanxiang, 30g sugar, 150g sesame seeds, 50g Lithospermum powder (edible and spice).
Method: Mix the above ingredients evenly. When roasting vegetables, use a spoon to scoop out the fragrant powder and sprinkle it on the vegetables. Spread about 1 gram on each skewer, and then use a brush dipped in oil to brush evenly.

Mix chicken essence, 20 grams of sugar, and 40 grams of salt together, put them into a container, chop 500 grams of pickled peppers, and 200 grams of Pixian watercress into puree, put them into an oil pan (1500 grams of salad oil), and stir-fry over medium-low heat until red.
After oiling, pour into a container with seasonings, stir evenly, seal for 12 hours and set aside.
5. Barbecue Tips 01. The best marinating state of grilled skewers: It is best if the meat is marinated neither wet nor dry, so that it is both delicious and tender.
01. Is it necessary to brush with oil during the baking process?
In addition to bacon rolls, other ingredients such as chicken wings, squid, beef tongue, etc. need to be brushed with oil during the grilling process.
(You can choose scallion oil, red oil, mutton oil, etc.) 02. How to control firepower?
Different ingredients have different firepower controls.
For example, squid is usually grilled over high heat; chicken wings are first grilled over high heat for 2-3 minutes, then grilled over low heat until the chicken wings are about 70% cooked, and then grilled over high heat until the chicken wings are mature.
Bacon rolls and other ingredients are first roasted over low heat until the ingredients are about seven or eight degrees ripe, and then roasted over high heat until the ingredients are ripe.
03. If the oil dripping from the meat may cause the barbecue grill to be too hot during the barbecue, you can sprinkle some salt on the charcoal to reduce the heat.
04. Sprinkle a small amount of ingredients several times so that the meat can be eaten more fragrantly.
05. Don’t apply the barbecue sauce after grilling. Be sure to apply it in the middle, because water will evaporate during the grilling process, which will cause the meat to taste dry and woody.
