Speaking of grouper, I have to say how I met it.
In the early 1990s, Mr. Chen graduated from university and was assigned to teach in Lingyuan Township, which is located at the junction of three counties in northern Zhejiang.
The school is on a hillside, and it is the central school with a nine-year system. There is a small river under the ridge, which the villagers call "Houxi".
The stream flows from Wuyuan and Hongping to Huangshan Village, all the way down the ravine and down to Lingyuan Village. The river is wide, the stream is gurgling, and the fish and gravel are vivid.
Mr. Chen is in his early twenties and has never been to such a remote mountain village, but the natural simplicity here attracts him. Children are innocent and kind, just like the clear and pure stream in Houxi, which makes him happy.
In my spare time, besides playing ball games with children, I also bathe and fish in the river. The interesting experience of catching grouper for the first time has made him unforgettable.
Through the narrow mountain roads, trees and grasslands of Panjia Station, it is Waimaxi.
The big stones that are connected together are particularly refreshing after being washed by the stream. This stream is spotless and clear as a mirror. Take a bite, it's cool and delicious. Running barefoot is cool and comfortable.
The children camped in the neighborhood and set up a pot rack by the river. Wood pickers, vegetable washers and water scoopers are all busy.
"Teacher, let's catch grouper!" Some boys called him.
"Lots of groupers," said the child. "Let's block a dam with stones and catch fish later."
Can you really catch grouper? Mr. Chen expressed doubts about this.
Several children rolled up their trouser legs and went into the water to touch the stone dam. Soon, a small V-shaped dam was surrounded.
Then pick up a stick and catch fish everywhere. A group of children, with sticks in their hands and streams running under their feet, kept beating water and shouting something.
"Yes, yes," the other party quickly shouted. "Teacher, come and see, swim past a few."
Sure enough, they entered the stone dam. They swim around, dragging their graceful posture and constantly swinging from side to side. It looks lively and beautiful, and I have no idea that I have entered the urn.
Grab some. Look at them. They are small, plump, fleshy, dark green and shallow-bellied, which makes them very attractive.
"Baked and eaten, it is fragrant and fresh."
"Braised in soy sauce, my mother cooked delicious."
"Eat whatever you want, there are many anyway."
The children skillfully cut the tail, cut it to the end, fished out the goods in their stomachs and washed them all in the stream. This fish is bare and clean.
First, boil the vegetable oil, pour some ginger into the pot, then fry the grouper one by one, turn it over one by one, fry it until it is brown, add some old wine, garlic seeds and peppers, buckle the salt and water, cover the pot and stew until it tastes good, and a plate of fresh braised grouper will come out.
There are some naughty children, and they also set up a branch rack to roast and eat.
Braised, roasted, eaten and full. Eat the taste, remember.
"Grouper, so fresh!" Teacher Chen sincerely praised and gave the children a thumbs-up sign.
Grouper, the original name of the locals. Different from the grouper in the sea, the scientific name of this fish is leptospira, which is a cold-water fish, and generally lives in the cracks of streams and ditches in the southern mountainous areas or at the bottom of deep pools.
Later, Mr. Chen learned from the villagers that the grouper grows slowly and has a small head, which requires extremely high water quality. Only transparent and pollution-free water can Ming Che survive, and it is impossible to raise it by manpower. Due to environmental pollution or the destruction of electric fish and medicinal fish, the number of this kind of fish is decreasing year by year.
Maxi River outside Lingyuan and Yaoxi River in Hecun meet in Lee Seung-Hyun and Hecun Township. There are original natural scenery here, the water quality is particularly pure, and with the protection measures in the village, groupers naturally increase.
This wild grouper, which grows in streams, is a pure natural food with more meat, less thorns and tender meat. It tastes particularly delicious and gradually becomes delicious on the table in the mountain village.
"The grouper in the fairy is really fresh." A couple went back to their hometown of Qi Lin from Hangzhou at the weekend. Everyone had to take a break in Shengxian and ordered braised grouper, two plates at a time.
There are groupers to eat, and the taste is naturally delicious.
By the way, Mr. Chen is me, and I speak for Tonglu gourmet braised grouper ~ ~ Hecun fresh.
