Among Qijiang rice noodles, Fuhuan rice noodle is an old brand.
According to the book "Humanistic Happiness in Qijiang Street Town History and Culture Series", Fuhuan rice noodles originated in the Qing Dynasty (around 1841 AD). At that time, Liu Qingfeng, a wealthy businessman in Fuhuan, had a thousand acres of countryside, dozens of servants and a prosperous life. He opened shops in Yunnan and Guizhou, and his business was booming. Once when Liu Qingfeng returned to Fuhuan, he talked with his family about eating rice skin in Yunnan. Envy from his family, he made rice skin himself. They soak rice, grind it into slurry with a stone mill, then spread cotton cloth with a rice pad, scoop up the rice slurry and steam it. After steaming, they cut it into squares of different sizes with a knife, blanch it with boiling water, and eat it with seasonings. It is delicate, smooth, fresh and delicious. Liu Qingfeng entertained his guests with rice skin as a fine dish.
In the thirty years of Daoguang Qing Dynasty (AD 1851), the technique of making rice chaff was improved, and the squares became strips. Fuhuan rice noodles have become the food signboard of Fuhuan, and rice noodle restaurants are full of diners every day. During the Republic of China, Fuhuan rice noodle restaurants mushroomed, and five or six rice noodle restaurants were added to the street.

Ganshui Yujia rice noodle brand was founded more than 31 years ago. Yu Guangshu, the owner, recalled that in May of 1986, she founded the Ganshui Yujia Rice Noodle Restaurant in Tieshiya, Ganshui Town, and the rice skin was produced by her family. At that time, she made a comprehensive inspection of rice noodle restaurants in Qijiang and found that the production technology of rice skin was similar and the quality could pass. If you want to run a rice noodle restaurant with its own characteristics, you can only work hard on the rice noodle restaurant. Therefore, she studied experiments in many ways and developed her own unique formula.
Clear soup rice noodles
In the Spring Festival of 1991, under the recommendation of Ganshui Industrial and Commercial Office, Yu Guangshu rushed to the county town with tools, prepared rice noodles, condiments and rice bowls, and participated in the first Qijiang individual specialty snack fair on behalf of Ganshui catering industry. The delicious taste and unique cooking skills of Yujia rice noodles attracted many citizens to taste at the exhibition.
Ganshui Yujia Rice Noodle was finally awarded the title of "Famous Snack in Qijiang County". As a result, "more than one rice noodle after catching water" became famous and was favored by consumers.
For more than 31 years, "Ganshui Yujia Rice Noodle" has never left Tieshiya in Ganshui. Yujia rice noodles have been integrated into the brand "Tieshiya Rice Noodles in Ganshui Town".
"I eat Fuhuan rice noodles almost once a week. Although I live in Zunyi, I can't help walking in when I see the signboard of Fuhuan rice noodles." Liu Ming, who runs a shop in Zunyi City, Guizhou Province, said that she grew up eating Fuhuan rice noodles. When she was young, she studied abroad. The first meal every time she went home was rice noodles. Now that she works in Zunyi, she still can't forget the taste of rice noodles.

"I found that there are Fuhuan rice noodle restaurants and Tieshiya rice noodle restaurants in places where there are many people in Qijiang. Sometimes I really want to thank these Qijiang people who open rice noodle restaurants because they moved their hometown flavor to me."
"My favorite food is sauerkraut rice flour, which is soft and delicate, and sauerkraut enhances the taste ..." Wang Yongmin said that sauerkraut rice flour is a unique taste in Qijiang rice flour. When he returned to Qijiang during the Spring Festival last year, he had tasted this kind of taste in a "Tieshiya Rice Noodle" restaurant on Shaxi Road, and now his mouth is watering when he thinks about it. Whether it is Tieshiya rice noodles or Fuhuan rice noodles, most of them are mainly pork dumplings and spicy condiments. This kind of sauerkraut rice noodles should be another innovation. "My mother came to Chengdu to see me on May Day this year, and specially brought two Jin of rice noodles to cook for me, but I always felt that the rice noodles cooked by my mother were inferior."
