Mr. Jin Yong once mentioned that Huzhou Zongzi is delicious in Duke of Lushan.
Mr. Cai Lan, a gourmet who is one of the four great talents in Hong Kong, once mentioned in Cai Lan Cuisine that Zongzi was produced in Huzhou.
Product history
"Zhu Laoda" was founded in 1887 (Guangxu 13). Zhulaoda Zongzi has a history of more than 100 years, and is a traditional famous spot in the south of the Yangtze River, enjoying a good reputation at home and abroad. Zongzi is a traditional cultural delicacy of the Chinese nation. During the Wei and Jin Dynasties, the custom of eating zongzi on the Dragon Boat Festival was very popular. The beautiful natural scenery and long-standing cultural heritage have constructed the history and customs of Huzhou for thousands of years, and formed Huzhou's unique food culture.
Huzhou's "big brothers" pioneered the exquisite pillow-shaped zongzi, with exquisite materials and sophisticated technology, and their own characteristics in color, fragrance, taste and shape. Tangyuan is sweet, sweet but not greasy; Jiaozi with minced meat is delicious, fragrant and delicious. Known as the "Zongzi Champion". After 120 years, flowers bloom and fall, and the tide rises and falls, and the "big brothers" have been deeply integrated into the lives of ordinary people.
Through the hard work of bosses, bosses have developed into modern enterprises combining traditional food culture with modern management. In terms of production technology and management methods, we have found a meeting point between historical inheritance and modern management. So that "bosses" have achieved rapid development and new impressive achievements. In the past 00 years, 1965438+ has successively won national honors such as "China Time-honored Brand", "China Famous Snacks", "Golden Top Award for Quality Products of Ministry of Commerce", "Gold Award for the First China Zongzi Culture Festival" and "Famous New Products of China Food Expo".
Zongzi, the oldest, has a history of nearly a hundred years. The creator Zhu Guangchao, known as the boss, is proficient in tea art and food. 19 10, he opened a shop for bosses who mainly sold zongzi, but also handled tea and food. After two generations' painstaking efforts, a series of improvements have been made to Zongzi, which has changed from an ordinary folk food to a fine tea and gift, and has become a traditional food with local characteristics in Huzhou. 65438-0927 In the Native Products Museum of the National West Lake Expo held in Hangzhou, the eldest zongzi was exhibited as a famous product in Huzhou, and won the high-quality native products award, which made it famous in one fell swoop. For nearly a century, the vast areas along the southeast coast, especially in Jiangsu and Zhejiang provinces, are almost well known. Dazongzi 1984 participated in the Zhejiang Fair in Shanghai, which was well received by all walks of life. The sales volume increased year by year, and the demand was in short supply.
At the end of the Qing Dynasty, in the streets and alleys of Huzhou, the ancient city, no matter day or night, no matter whether it is cold or hot, there was always a tall Shaoxing man with a bucket in his hand, shouting a clear and melodious tune to sell: "Burning jiaozi with minced meat ... jiaozi with lard wrapped in sand ..." The sound reached him, and jiaozi smelled very fragrant. When people are hungry, especially on cold winter nights, it will be particularly comfortable to eat a few palatable and boiling dumplings. Over time, he and his zongzi have become a part of local people's daily needs, adding a strong pastoral feature to the ancient city of Jiangnan.
He is the founder of general manager Zhu.
The eldest brother was originally named Zhu Guangchao and nicknamed Jingchuan. 1865 was born in a poor family in Shaoxing. Their father, a waiter in a tin foil shop, died in his early years, leaving them three brothers, who grew up with the help of their mother. Because the family was poor, my brother died soon, and my brother Zhu Guanghua was introduced to Huzhou as a minor to study the tea and food industry. 1878, Zhu Guangchao was fourteen years old, and his mother was sick and paralyzed in bed, making a living increasingly difficult. So he left Shaoxing with his mother and went to Huzhou to find a way out.
After coming to Huzhou, I was recommended by my brother who worked as a master in Zhenyuan (now Zhenyuantong) tea shop and became an apprentice in the shop. He was born smart and studious. After three years, he was fully qualified. Because of his solid basic skills, he/kloc-learned the general skills of making tea, cooking and cake at the age of 0/7. 2 1 year-old can skillfully and difficultly operate colorful cloud cakes, salted peach slices, crisp sugar and other delicate points independently. The boss made an exception and raised his salary, becoming a leader among the young masters in the tea and food industry.
Two years later, he resigned to sell zongzi. Because he was born tall, he stood out when selling in buckets. People don't know his last name, so they call him "boss" (meaning Daijoni). Later, I gradually got to know him, and when I met him, I called him "Boss Zhu" to show my goodwill. With the gradual expansion of business, the name of Zongzi has become more and more famous, and the name "Big Brothers" has evolved from a nickname to a signboard.
Eldest brother was young and illiterate. He got married at the age of 26, married Zhu, had four children and had a harmonious family life. He is amiable because he came from a poor family and sympathized with the working people when he got rich. For example, beggars often serve cooked rice and hot dishes when they come to eat, and their families are not allowed to give alms with cold rice and cold dishes. It is also stipulated that every year on the first and fifteenth day of the first lunar month, all beggars will be given a copper coin; Beggars who come to the door after 8: 00 on New Year's Eve will get two and a half pieces of rice cakes, and their families will send the beggar away according to them until his death.
1927, big brothers were bloating and bedridden. In the same year, he died at the age of 63 on the eighth day of the tenth lunar month.
1887, the bosses left the same store in Zhenyuan and took the first step of independent portal. He deeply understands that it is unrealistic to expect to open a tea shop without money and storefront. We must start with peddling and develop step by step. Based on many years' experience, he identified the common people's habit of eating sweets, and carefully produced orange cakes and sweet butter jiaozi for trial sale. He shouted in teahouses and restaurants during the day and went in and out of the bookstore at night. His footprints are all over the streets. But after selling for a while, the business was average. He was not discouraged. As he peddled and observed, he came to the point that orange cakes and crisp wine jiaozi cakes were sold in big stores and small ones, which made his business seem to have no characteristics at all. One year, on the eve of Tomb-Sweeping Day, he went to the street and saw every family making zongzi. He immediately seized the inspiration of doing business and sold a bucket of red bean zongzi the next day. Sure enough, he sold short. In the next few days, business is getting better and better. Through this business practice, he began to realize that doing business must attract customers and sell his own characteristics to have a future.
After he chose to sell zongzi for domestic business, he improved his management quality in a down-to-earth manner, and deliberately asked his work to do two things well: (1) improving the operation technology of making zongzi. At that time, most of the folk jiaozi was "sharp-pointed". In the practice of making zongzi, he changed it to a "slender quadrilateral". Obviously, the latter has three advantages over the former (1) unique and beautiful; (2) Be able to cook more, pack more and sell more; (3) It is convenient for packing. (2) Improve the quality of zongzi and innovate varieties with different colors. At that time, the variety of zongzi in Jiangnan water town was very simple, only red bean zongzi, red date zongzi, salty zongzi and so on. In the practice of reform, the "glutinous rice balls washed with lard and sand" was successfully pioneered, making glutinous rice balls and meatballs the two major characteristics of "the oldest glutinous rice balls".
When you start selling zongzi, prepare raw materials in the morning, such as zongzi, glutinous rice, silk grass, firewood and so on. Make dumplings and cook them in the afternoon. After the dumplings are cooked, they are put in a bucket of moderate size and covered with two boards, that is, they are sold all the way along the street with the bucket in their hands. At night, he was lighting a lamp with a lantern in one hand. In the dead of night, he shouted, "jiaozi with bacon ... jiaozi with fine lard ...", and his footprints were all over theaters, bookstores, workshops and other places. From eight o'clock in the evening, I usually go home after ten o'clock, rain or shine, and never stop. This period lasted about ten years.
More than ten years' experience in selling barrels has accumulated some funds for him. The fame of bosses spread all over Huzhou City with his footsteps. These two points provide a material foundation and credit guarantee for his future business expansion. With the increasing sales of zongzi, he felt that barreled sales could no longer meet the needs of development; In addition, it is not suitable to make more zongzi in summer and hot season, and it is necessary to sell some tea and cakes as a supplement.
So, 1996, at the age of 42, he decided to stop selling along the street and switch to a fixed-point stall.
Regarding the location of the booth, he made a careful choice, to be located in the downtown area, taking into account the business of big customers; It is also close to the opium museum to attract opium customers. So he decided to set up a stall in front of Cai Feng Fangruiyuan Jewelry Store (now Renmin Road Hardware & Electric Material Store). The owner of Ruiyuan Jewelry Store used to be his cigarette companion and had a good friendship. Ruiyuan is also the storefront of the wall gate pavilion, and setting up a stall against the wall does not affect the business of the store. Since then, he has been a street vendor for three or four years.
Since the stall has a fixed location, his wife and children can take care of the business at ordinary times, so he has more time to exploit the loophole of zongzi technology and consider running the business. During this period, he not only further collected dumplings and meat dumplings, but also made chicken dumplings, ribs dumplings, broad bean dumplings and pea dumplings according to different seasons. At the same time, rough paper bags and spring baskets were used in the packaging, and the signboard paper with the words "Big Brothers" printed on the red background made his booth the size of a small shop.
199 1 year, before the outbreak of the Revolution of 1911, the bosses reached middle age. After more than 20 years of business practice, he began to have the courage and courage of an entrepreneur. At the age of forty-six, with the accumulated funds, he opened a "big boss" shop, mainly selling zongzi and also dealing in tea and food.
When the "Zhu Lao Da" store was first established, it was located in front of the temple of the state government. At the entrance of Pingfeng Lane, the signboard of the store is black and white "bosses". In addition to zongzi, it also deals in lard rice cakes, sugar rice cakes and other teas. These foods were cooked by himself and his family, and no master or apprentice was hired.
1927, when the bosses were ill and had a premonition that they were going to die, they called their four sons to the bed and pointed to the bucket he had carried in the past, warning them that customers are parents who feed and clothe themselves. To make Daxie's brand enduring, the quality must be exquisite and the word of mouth must be adhered to. After his death, his four sons managed according to the instructions, and their business became better and better. 193 1 year, the store reached its peak and reached the peak of development. The original storefront can no longer meet the business needs. In the spring of this year, we chose Shangtaihefang (now Xiangyang Cloth Shop on Renmin Road) to open a new store opposite ruitai South Goods Store. The new store is near the downtown area at the mouth of Fish Lane. The signboard of the store is the word "Zhu Laoda" in gold on a black background, and "Zhu Laoda Zongzi Tea Shop" is written on both sides. Behind the store is the Zongzi workshop, the front building is the staff dormitory, and behind it is the tea workshop.
Of course, the management of the big bosses is not smooth sailing, and they have also experienced the wind and waves of peer competition and mutual conflict. However, because their products are of high quality, delicious taste and cheap price, their business style has finally maintained their honor.
"Zhu Laoda Zongzi" was first named in the late Qing Dynasty, and it has a history of nearly a hundred years since 20 13. It has gone through three stages: selling by the barrel, setting up a stall and opening a shop. With the efforts of two generations, it has become a traditional food with local characteristics in China. For nearly a century, Zongzi has become a popular food in the southeast coast and overseas, especially in Jiangsu and Zhejiang provinces. Friends and relatives also exchange gifts with each other. In a word, Zhu won such a high reputation, which has both internal factors of "high quality" and some external factors to be tested.
When the founder was still peddling in the bucket, he had to cross the streets every day and enter and exit the tobacco house and teahouse. Most of their trading partners belong to the affluent middle class. They are very good at eating and tasting, and they are good at influencing public opinion. If the old zongzi can't highlight the characteristics of color, fragrance, taste and shape. Will inevitably be denied by those diners. In addition, because zongzi can be stored for a long time, customers may take the products abroad and give them to relatives and friends, so that the reputation of "boss" will spread.
As the saying goes, "If you don't know the goods, you are afraid to shop around." It is by virtue of quality first and excellent management style that Mr. Zhu won the reputation and made a resounding brand. 1927 In the local products museum of the National West Lake Expo held in Hangzhou, "Zongzi" was exhibited as a famous product in Huzhou and won the high-quality local products award. This made him famous. This winter, Shanghai Lili Native Produce Company (the intersection of Zhejiang Road and Shaanxi Road) sent people to the lake to discuss the consignment business of zongzi. 193 1 year later, Shanghai Shengsheng Local Products Company (in Zhejiang Road) was also linked to the "bosses" for consignment. Zongzi was shipped to Shanghai, which is very famous in the Shanghai market. In order to make money, some people even have fake zongzi.
