What I am making today are spring rolls with vegan fillings. The ingredients used are all in the refrigerator at home. In fact, as long as the spring roll fillings are what you like, you can mix them as you like, whether they are vegan or meat. You can make whatever you can think of, such as eggs or eggs, but one thing you need to make sure is that all the ingredients must be cooked. Because the frying time of spring rolls is short, if they are raw, the skin of the spring rolls may be burnt, but the fillings may not be cooked. Step 1: We first prepare the ingredients. I used 1 carrot, 1 potato, 1 bell pepper, and 1 small handful of enoki mushrooms. I forgot about the enoki mushrooms. Took pictures. The amount of ingredients depends on how many you want to make. The three of us in the family didn't even finish the spring rolls I made with these ingredients.
Step 2: Peel the potatoes, wash them and grate them into shreds, then wash off the starch in the potatoes. The water I use to wash potatoes is the Lycra water purifier I just bought a few days ago, and I have to say it is really convenient. I usually use tap water directly when cooking and washing vegetables, and we all know that water pollution is a common phenomenon nowadays, so having a household water purification device is very necessary for our health. Especially for people like me who use less water, it is not cost-effective to install water purification equipment. The LAICA water purification kettle is a good choice. It can be used at any time and filtered at any time. It is very convenient to use. And I also tried to use the water from this filter kettle to make tea. The taste is similar to the purified water bought outside, and the tea water overnight did not change very dark color. Another very important point is that it looks very good. like very much.
Step 3: Peel the carrots and grate them into shreds, and wash the enoki mushrooms. It is best to make carrot shreds slightly thinner than potato shreds. If the carrots are fried for a short time, they may have a hard core, but the same as potato shreds can be used.
Step 4: Wash the bell peppers with water from a Lycra filter jug.
Step 5: Cut the bell pepper into thin strips. It doesn't need to be too thin, because it will be soft after frying.
Step 6: Heat the pot, pour appropriate amount of peanut oil, add chopped green onions and saute until fragrant.
Step 7: After the aroma comes out, add shredded potatoes, carrots, and enoki mushrooms and stir-fry. Add appropriate amount of salt, oyster sauce, and soy sauce and stir-fry until cooked. There is no need to add water here, because the enoki mushrooms will release a small amount of water during the frying process, and I did not drain all the water from the potato shreds, but directly took them out of the water and shook them a little. Also, you need to pay attention to the state of the shredded potatoes. Don't fry them too soft. They can be eaten as long as they are cooked. If they are too soft, the taste will not be good.
Step 8: When the shredded potatoes are almost cooked, add bell pepper and stir-fry for about 1 minute and it is ready to serve.
Step 9: Place the fried vegetables on a plate and let cool.
Step 10: Take a piece of spring roll wrapper and add the fried side dishes. If you like, roll it up. I bought the spring roll wrapper, but if you don’t like buying it, you can make it yourself.
Step 11: This is the rolled spring roll.
Step 12: Pour an appropriate amount of peanut oil into the pan, add the wrapped spring rolls, and fry until golden brown on both sides.
