If you can't burn them, cook them for more time when you blanch them in the second step, so as to get rid of the fishy smell of the pig's trotters.
3. The cold water soaked in pig's trotters is directly drinkable water, and tap water is not used;
4. Putting hot trotters directly into cold water will make them firm and crisp.
5. The broth used in the sauce is the original soup for boiling pig's trotters.
