Unless there are special circumstances, a formal China banquet usually serves two kinds of wine: white wine and wine. Due to eating habits, most of the wines served at China banquets are red wine, and they are generally sweet red wine. Red wine is first used because it is full of joy, while sweet red wine is chosen because many people disagree that dry red wine is not sweet and slightly sour. Usually, three cups of different sizes are placed in front of the dining table in front of the diners. From left to right, there are white wine glasses, grape wine glasses and water cups. Specifically, there are not many choices about Chinese drinks in terms of collocation with dishes. You can drink whatever you want, and you can drink whenever you want. Beer is generally not served at formal banquets in China, but it is more common in light meals and food stalls. Objectively speaking, wine with cold dishes is better.
2. The collocation of food and wine in western food
There are three kinds of drinks in western food: pre-meal wine, table wine and post-meal wine. They each have many specific types. Generally speaking, light-flavored dishes are matched with light-scented wine, while dark-colored meat and poultry dishes are matched with rich-flavored wine. Choose a variety of wines aimed at appetizing before meals, and choose a variety of sweet wines that help digestion after meals.
(1) Drink before meals. Aperitif, alias aperitif. Obviously, it is drunk before a formal meal or with appetizers. Generally speaking, before serving western food, many western guests like to drink a glass of wine with appetizing function, such as absinthe produced in France and Italy, and cocktails as pre-meal drinks, such as Bloodtarry.
2 appetizers. When western guests eat appetizers, they should choose wine varieties according to the specific content of appetizers. For example, caviar should be vodka ((vodka)) produced in Russia or Poland; Shrimp cocktail glasses are made of white wine and taste dry or semi-dry.
3 soups. Different soups should be matched with different wines, such as oxtail soup with sherry and vegetable soup with dry white wine.
4 cold salad. Salads are usually served with pale white wine or aperitif, depending on the contents of the salad.
(5) Fish and seafood dishes as well as meat, poultry and various game dishes. The table wine in western food is wine, mostly dry wine or semi-dry wine. When choosing wine for dinner or banquet, there is an important thing to pay attention to, that is, "white wine with white meat, red wine with red meat." The so-called white meat, that is, fish, seafood and chicken, should be eaten with white wine. The so-called red meat, that is, beef, mutton and pork, should be eaten with red wine.
Cheese. Suitable for white wine with strong flavor, and some kinds of cheese can go with wine.
Dessert. Usually with liqueur or sparkling wine, as well as German Rhine white wine, French champagne and so on.
(8) after-dinner wine. Refers to a drink used to help digestion after a meal. The common after-dinner wine is liqueur.
