Add two spoons of white sugar, one spoon of bean paste, two spoons of light soy sauce, and one spoon of dark soy sauce.
Add boiling water, not too much, just enough to be flush with the fish pieces.
Turn on high heat, bring the soup in the pot to a boil, then turn to low heat, cover and simmer.
It doesn’t need to be simmered for too long, 5 minutes is enough.
Then open the lid of the pot and turn to high heat to reduce the juice.
The final amount of soup can be decided according to your own preference.
Finally, garnish with coriander or garlic sprouts.
