2. Mix mutton with onion slices, ginger slices, salt, chicken essence, cooking wine, and a very small amount of sugar (or not, according to your own taste), cover it with plastic wrap, and put it in the fresh-keeping room of the refrigerator for pickling. Lamb kidneys, chicken wings and chicken hearts are also treated in this way.
After about 3 hours, we began to wear skewers, two bamboo sticks for lamb kidneys and chicken wings, and one bamboo stick for mutton and chicken hearts. 5. Roast chicken wings and chicken hearts below, and the roasting method of chicken hearts is the same as kebabs. When the chicken wings are cooked, put some ketchup on them. It's delicious. 6. The small bottle next to it contains ketchup. After baking several batches of kebabs, the fire almost went out, and we quickly added charcoal. This time, the process of keeping fire was photographed. Because good charcoal has been burned for the first time, it is much easier to add charcoal, and new charcoal will flourish every minute.
7. The lamb kidneys are roasted in the same way as kebabs, except that they need to be roasted for a while. In addition, the sheep kidney is covered with oil, and the oil keeps dripping on the charcoal, and the charcoal will catch fire.
