According to legend, at the end of the Northern Song Dynasty, northern jurchen nobles invaded the Central Plains on a large scale and captured Kaifeng, the capital of the Northern Song Dynasty. Zong Ze, a native of Yiwu, led soldiers recruited from Yiwu to defeat Jin Jun, recovered Kaifeng and went to Nanjing, the new capital, to report the good news. By the way, I went back to my hometown in Yiwu to visit the families of the soldiers and express my condolences to the families of the soldiers who died in the Anti-Japanese War.
The villagers in Yiwu heard that Grandpa Zong had won the battle and came back from the front line of resisting gold. They all came to visit his old man's house. Every household also kills pigs to make wine. Please ask Grandpa Zong to bring condolences to the soldiers who fought bravely against gold. Grandpa Zong was very embarrassed to see that the villagers had brought so much pork. He said to the villagers, "Kaifeng is far away. How can we take these fresh pork? " However, seeing that the villagers loved the soldiers who resisted gold so much, he came up with a good idea. He sent people to prepare several big ships, put pork in the cabin, then put salt on it and took it back to Kaifeng.
When Grandpa Zong returned to Kaifeng, the soldiers learned that Grandpa Zong had returned from his hometown. They came to ask about Grandpa Zong's parents and sisters in his hometown. Grandpa Zong happily said to them, "The elders in my hometown are all well. I hope you can defend your country and fight against the Golden Army. You also asked me to bring something to comfort you. " Grandpa Zong asked people to open the cabin and only saw the pickled pork in the cabin, which smelled delicious. After the fire, everyone felt delicious, their appetite increased greatly, their spirits rose, and they fought more bravely.
A few days later, the emperor came to Kaifeng to express his condolences to Grandpa Zong and the soldiers who resisted gold. Grandpa Zong cooked the meat brought from his hometown into various dishes and entertained him. He looked at pots of fiery red things. They tasted delicious. Then he asked Grandpa Zong, "What is this dish? Beautiful and delicious? " Grandpa Zong said, "This is pork leg meat brought from my hometown in Yiwu." Since Yiwu was under the jurisdiction of Jinhua in ancient times, the emperor praised it: "What a Jinhua pork leg, red as fire and delicious, let's call it Jinhua ham." The name of Jinhua ham has been circulated since then!
