The four-day trip to Sanya made me know more about Hainan's B-class cuisine. I like the roadside stalls in this southern city. Even in a tourist city like Sanya, local people can't live without all kinds of traditional food shops.

There are special hot pots everywhere, and Hainan is no exception. The most distinctive pot bottom is dregs vinegar. What is dross vinegar? Garbage vinegar is a traditional snack in Puqian Town, Wenchang City, Hainan Province. The vinegar produced by the fermentation of distiller's grains during folk brewing is used as the soup base. As a folk snack, dregs vinegar pot bottom has been passed down for nearly 500 years, and sour and hot dregs vinegar can improve the freshness and freshness of seafood.

On the streets of Sanya, there are many snack bars that mainly make rice noodles with vinegar residue and chafing dish with vinegar residue. The memory of my last trip to Sanya is very vague, and I have no impression of the way I was jealous. We must try this time.

Compared with the chicken coconut that was specially eaten later, this family can eat Wenchang chicken, but the impression is not deep.

[Beef] Rinsing includes fresh beef and mutton. Dong goats in Hainan are very famous, but we chose beef by a strange coincidence. The porridge hot pot in Shunde made me fall in love with the way of eating fresh beef in the hot pot. The beef in this restaurant is also good. Similarly, you can turn off the fire and eat it safely after a little cooking. Wenchang chicken and fresh meat are not easy to cook, so the heat should be controlled well, which directly affects the taste.

[Seaweed] I ate seaweed for the first time in my life. Seaweed was black and thin, like hair. The hot pot is slightly rinsed, and the small ingredients are transparent, sour and crisp.

[Yuba] In any hot pot, bean products are versatile. Yuba can absorb the juice of vinegar residue and fully experience the special taste of vinegar residue.

[Bamboo shoots] The processed bamboo shoots are very fine, and this light food goes well with the bottom of this pot.

[Head] It's the first time I've seen a raw head in my life. I'll tie a knot and rinse it. It tastes like onions. I don't like it very much, but it doesn't hurt to taste it as a special feature.

At night, the shops on the street are all lit up, and this area has become a favorite food street for food lovers.

The decoration in the store is a typical fast food noodle restaurant with clean tables and chairs. When ordering food at the entrance, the kitchen is in the back. It won't take long for customers to place an order and sit down, and noodles will be served.

Dishes or tastes: Noodles here are divided into dregs vinegar, ordinary powder soup and Hainan abalone powder soup, each with different ingredients to choose from.

[Three Fresh Conch Residue Vinegar] is an explosion in the store, and the price is much higher than the average price of noodles in the store. A bowl of 32 yuan is also bigger. The bowl contains seafood, such as shrimp, fish fillets, fish eggs, seafood balls, clams and many bean sprouts and vegetables. Pink is white and tender Hainan powder. In addition to the residue vinegar, the soup base also has spicy oil, but compared with the special residue vinegar hotpot, the acetic acid here is much lighter.

Because dregs vinegar is a rich soup base, the taste of seafood itself will be covered up. Personally, I prefer to eat fresh ingredients and can grasp the freshness of seafood. This one-pot Huimian Noodles is more suitable for fast food for one person, and it is not recommended for diners who want to know more about dregs vinegar.

Environment: If there are tea shops and tea shops on the streets of Beijing at intervals, then the shops that are most frequently exposed on the streets of Sanya are those that sell refreshing food. The Qingbuliang recommended by this friend is not too fancy, and the products sold are traditional and classic. The store is very spacious, with calm wooden tables and chairs, which is very like an online celebrity.

Food or taste:

The biggest feature of Hainan Qingbuliang is that coconut meat, coconut juice or coconut milk are the main ingredients, and the ingredients take into account the humid and hot climate characteristics of Sanya. Ice cubes, kidney beans, mung beans, red dates, coix seed, taro, macaroni, glutinous rice balls and longan quail eggs are light and sweet.

[Sugar water refreshing and nourishing], the most traditional one, the soup base is light sugar water. There are all kinds of "ingredients" in it, which feel like mung bean soup cooked by Beijing families in summer, but obviously, the process of refreshing and nourishing is more complicated, so it can become a "strong ingredient" for street snack bars to attract guests.

The ingredients are almost the same as traditional ones, depending on which flavor you like to drink.

Grinding the leaves of Paederia japonica and rice into rice pulp, finally kneading into rice balls, fixing the shape, drying them, and adding some seasoning when eating, which will become a unique snack in Hainan. This shop can eat desserts such as coconut milk, chicken manure, rattan, etc. It is highly recommended to try.

[Tangyuan] In the evening, the shop is not busy. I saw two aunts sitting at the door and wrapping jiaozi. jiaozi is very big. Look at the menu There is also jiaozi here. In the north, jiaozi only eats on certain occasions, but obviously not here.

The guests who came in were tired as soon as they got up. They ordered a bowl of powder and chattered slowly at the entrance. The block where the shop is located is very distinctive. When we first arrived, we were a little confused about the long menu. The aunt who ordered food at the entrance smiled and introduced us how to eat and choose.

Food or taste:

There are three kinds of abalone powder, Hainan powder and Hainan instant noodles in the shop. You can also choose several ingredients separately.

The powder of Paul powder is relatively thick. Although there are dry powder and soup powder, most of them are called soup powder. Hainan powder is a staple food that locals in Haikou, Hainan often like to eat. Hainan powder is ok, and the main method is cold salad. When cold dishes are mixed, it is often necessary to mix various ingredients and sauces to marinate, so it is also called marinated powder.

[Carrot powder beef brisket], the three sisters ordered three kinds of carrot powder respectively. Soup and flour are the same, the difference is the topping. A beef brisket is a small piece of beef brisket. Abalone powder tastes unexpected, but it is soft and a little sticky. Bittern is very thick, slightly sweet, and it is a bit easy to get bored when mixed with soft powder. Fried peanuts and sauerkraut improve the taste, but this kind of large and sweet powder has not been recognized by peers.

Hainan is one of the few coffee producing areas in China. More and more domestic boutique cafes have begun to use coffee beans produced in Hainan. After traveling to Sanya, eating, drinking and soaking on the beach and finding one or two local fine coffees are also one of the good ways to experience the city.

Environment: The location is very comfortable, built in the parking lot of Luhuitou Scenic Area, facing the sea, and the sea breeze can directly blow into the transparent coffee shop. The decoration is extremely simple, and the coffee utensils only meet the most basic functions, but I have to say that the details are very particular. From the atmosphere of the coffee shop to the temperament of the barista, it is full of ignorance. It's really a pleasure to sit in a bar and watch the barista make coffee. Of course, cool baristas don't talk too much, and drinking coffee here needs to be quiet.

Immediately, I was shocked by the handwritten coffee list. It is very beautiful in calligraphy, and folding naturally divides hand-made coffee into three grades according to the price.

Food or taste:

Hand-brewed coffee is divided into 58 yuan and 60 yuan, 188 yuan. There were three kinds of restricted beans when we went: Indonesia, Ethiopia and Colombia.

[Coffee skin tea] is a special feature here. Tea made from coffee peel is light in color and slightly sour in taste.

[Guatemala], the favorite clay pig mug, with a hint of Japanese flavor, is in tune with the temperament of the store. Coffee is very good, you can taste the barista's concentration and good beans.

[Colombia], perhaps to avoid our confusion, this cup is equipped with exquisite French teacups. Colombia is a bit bitter, the acidity is not prominent, and the entrance is slippery. It is really comfortable to drink good coffee brewed in a proper way at high temperature.

Environment: I thought I was in the wrong place. I rummaged through the whole stationery store and found it was here. A large area, in front of the long bar is a comfortable bar base, where you can watch the barista's operation while communicating. Next to the bar is a whole wall of certificates, and I suddenly feel that hidden dragon and crouching tiger are here.

Food or taste:

A barista can handle all the needs of Italian coffee, hand-brewed coffee and special coffee at the same time. His strength is very good. It's easy to chat, and guests who come alone won't feel bored.

[Latte coffee], very fine milk bubbles, flowers are also passed, and milk and beans taste good together.

[Dirty], I didn't delve into the variety of milk, but it was really delicious.

[Dida Avocado Iced Coffee] is a very special tune. The bottom of the triangle cup is avocado puree with milk and ice cubes on it. When drinking, you need to pour espresso and stir it evenly. When the three clear colors are mixed together, avocado will not melt, and the fresh taste when drinking is very unique.
