Gourmet in Longshoushan Nature Reserve
Rubbing fish noodles is a unique pasta variety in Zhangye, Gansu Province. It is named for its thick middle and sharp ends, which looks like a small fish. Its practice is to knead noodles into noodles about an inch long with the palm of your hand, and then put them in a pot, or boil or fry them, or eat them cold in hot weather, which is the favorite food of local people.
