Tip: When blanching, don't put too much at a time to avoid uneven heating.
Second, the sauce explodes eight belts
Features: the sauce bursts open the outer package, and the bite of seafood is full of the whole taste buds, with endless aftertaste.
Ingredients: octopus, onion, coriander, oil, ginger and lobster sauce.
Exercise:
1. Shred onion, cut coriander stalks into sections, shred ginger, clean octopus after removing viscera, mouth and eyes, and cut into pieces of appropriate size;
2. Add water to the pot and add ginger slices to boil. Add octopus, blanch 10-20 seconds, then take out and drain. Blanching time should not be too long.
3. Pour oil into the pot, add shredded ginger, stir-fry over low heat, add drained octopus, add two spoonfuls of lobster sauce, and stir-fry quickly and evenly;
4. Add shredded onion and coriander, stir fry quickly, and do not need to add extra salt when eating.
Tip:
1. Octopus can be replaced by squid or cuttlefish larvae.
2. The salt of lobster sauce is enough, and there is no need to add extra salt and soy sauce to taste.
Stewed tofu with sanba belt
Features: Full of umami flavor, soft and delicious.
Ingredients: eight belts, tofu, onion, ginger and garlic, extremely fresh fragrance, salt and small red pepper.
Exercise:
1, 8 Remove the eyes, mouth and ink sac, clean them, cut them into small pieces, blanch them in boiling water for 10 second until the meat is firm, then take them out and drain them for later use. Don't pour soup.
2. Cut the tofu into small pieces and chop the onion, ginger, garlic and pepper;
3. Put the oil in the pot, add the onion, ginger, garlic and pepper to stir fry, add the eight belts to stir fry, and pour in 1 spoon of fresh soy sauce to stir fry evenly;
4. Pour the eight-belt hot soup into the pot, put the cut tofu into the pot, turn to low heat and stew until the soup is less and the tofu becomes soft and porous, and sprinkle some chopped green onion when taking out the pot.
Tip:
1, it is best to blanch the eight strips first, otherwise a lot of water will be precipitated during frying, which will affect the taste;
2. Don't throw away the soup that has been blanched for eight sections. Especially suitable for stewing tofu and fish, with delicious taste;
The longer the tofu is stewed, the better it tastes, so it takes a long time to stew.
Fourth, eight fried leeks
Features: bright color, crisp and delicious.
Ingredients: 500 grams of eight belts, a handful of leeks, appropriate amount of onion and ginger, 2 teaspoons of cooking wine, and a little salt.
Exercise:
1, after washing the eight belts, clean the internal organs and oral cavity, pat them loose with a knife, cut them into sections, rinse them again, and then use kitchen paper to absorb water;
2, oil pan, when the oil temperature is 40% to 50% hot, put eight belts, quickly pull out and drain the excess oil;
3. Leave a little base oil in the pot, add the onion and ginger stir-fry until fragrant. At the same time, add the shredded pork and leek, stir-fry quickly, and then stir-fry a few times quickly after adding cooking wine;
