1. When frying sweet potato balls, pay attention to controlling the heat. Do not use too high a heat, which may burn the balls easily. Pour oil into the pot and heat until it is 40-50% hot, then add the meatballs. Don't wait until the oil temperature is too high before adding the meatballs, otherwise the outer shell will be fried and the inside will still be raw. If the oil temperature is too low, the meatballs will eat too much oil and become greasy.
2. Different varieties of sweet potatoes have different sweetness and starch content. If it is a very sweet sweet potato, you don’t need to put too much sugar in when frying the sweet potato balls, otherwise the sweet potato will taste even sweeter. If it is a sweet potato that is not very sweet, you can add some sugar. Of course, if you like to eat the original flavor, you don’t need to add sugar.
3. If you want to add sugar, add it when kneading the dough, so that it will color quickly during the frying process, but you must pay attention to the heat so as not to burn it. When making dough, you can use ordinary flour, or you can add some glutinous rice flour. Sweet potatoes themselves contain starch, but due to poor adhesion of starch, if flour is not added, the sweet potato balls may fall apart as soon as they are cooked.
4. After adding flour, the sweet potato balls will not fall apart easily, so that the fried balls will be delicious. Be careful not to add too much flour, as too much flour will make the meatballs hard and taste slightly worse. The specific amount of flour to add depends on how many meatballs you make and how many sweet potatoes you prepare. In addition, the size of sweet potato meatballs should be controlled between 15g and 20g. Too light or too heavy will affect the taste of the meatballs.
