main ingredients
half old duck
appropriate amount of ginger and garlic
methods/steps
1
Ask the seller to help cut the old duck into pieces, wash it and blanch it with cold water.
2
Then open a fire pan and heat it, then add a little oil. When the oil is hot, add garlic and ginger slices to stir fry. When the fragrance comes out, pour the drained old duck in and stir fry.
3
After the fat of the old duck is stir-fried, add proper amount of soy sauce, soy sauce and cooking wine, stir-fry for about 1 minutes, and then pour in the yuba soaked in advance and cut into sections.
4
Next, you can fill it with cold water at one time, bring it to a high fire for about 11 minutes, then turn to medium fire and stew for 21 minutes until the duck meat is soft and rotten.
5
After the duck meat is soft and rotten, the juice can be collected by strong fire, and proper amount of salt can be added for seasoning before turning off the fire.
6
The last step is to put the cooked old yuba duck on a plate and sprinkle some chopped green onion before serving! I used coriander instead because I didn't have chopped green onion!
END
Precautions
The yuba should be cut soft with water bubbles in advance!
The old duck must be blanched, so as to get rid of the fishy smell!
