Shredded green peppers and potatoes
Ingredients required

1. Prepare two potatoes, choose fresh ones, which will have more moisture and a better taste. Choose potatoes with yellow hearts, which will make the color more beautiful when fried.

3. Prepare an appropriate amount of green peppers and cut them into shreds, put them into a plate and set aside. Soak shredded potatoes and wash away the starch. Wash it several times so that it won't stick to the pan easily and will be crispier when frying.
4. Boil the water in the pot, add a little oil, an appropriate amount of salt, and a little white vinegar, then pour in the shredded potatoes, blanch for 30 seconds, and remove after blanching. Then rinse it with cold water to make it taste crisper.
5. Heat the pot, add oil and slide the pot to prevent sticking, and heat until smoking and pour out. Heat an appropriate amount of oil in the pot. When the oil is hot, add the green peppers and stir-fry until the spiciness develops. After the spiciness develops, add the shredded potatoes and stir-fry a few times.
6. After stir-frying evenly, start seasoning, add salt, chicken essence, and a little white vinegar, then stir-fry over high heat for 30 seconds. The fire must be high when frying shredded potatoes, so that they taste delicious. Then add a little water starch to thicken it.
7. Pour an appropriate amount of oil before serving to increase the brightness of the dishes. After stirring evenly, you can remove from the pan and plate.
