How to make lotus seed paste and egg yolk mooncakes

9. Take a piece of pie crust dough and flatten it on the palm of your hand. (The pie crust dough is relatively sticky, so pat some flour on your palms to prevent it from sticking)
10. Place the lotus paste filling in the middle of the dough.
11. Use both hands to slowly push up the pie crust to wrap the lotus paste.
12. Continue to push up until the lotus paste is completely covered. Pay attention and try to make the crust evenly thick so that the filling is not exposed.
13. After wrapping, it will become a round ball.
14. Pat a little flour on the ball to facilitate unmoulding. Put the ball dough into the mooncake mold.
15. Press the mooncake mold directly on the baking sheet to press out the mooncake pattern (do not apply oil on the baking sheet or put anti-stick material on it, but you can put tin foil on it).
16. Lift the mooncake mold and that’s it. Spray some water on the surface of the mooncakes and bake in a preheated oven at 200 degrees. Bake for about 5 minutes. After the mooncake pattern is set, take it out and brush the surface with egg yolk water (only brush the surface, not the sides), then put it in the oven and bake until it becomes a drum shape around the mooncake and the crust is evenly colored. .
