Method to Make Cornmeal and Red Bean Pancakes

One-third of the cornmeal plus Two-thirds white flour and moderate amount of sugar and mix well.

Mix the yeast with lukewarm water and work the dough until it is smooth.

Wait for the dough to fully rise (about 50 minutes). To speed up the process, place the bowl of dough in warm water and cover with a lid to prevent water loss.

Wait until the dough has doubled in size and is ready to rise, then knead the dough well to deflate it, then divide the dough into small pieces and use a rolling pin to spread the small pieces of dough into a pastry, meanwhile heat a pan and pour a little cooking oil into the pan.

When the pan is hot, turn the heat to low and place the pastry in the pan, turning it over and browning on one side to continue browning on the other. You can also fill the tortillas with a homemade red bean filling, which adds a variety of textures to the tortillas.
