1. Ingredients: 200g flour, 10g cooking oil, 200ml boiling water, 50ml cold water.
2. Put the flour into a basin, pour boiling water into the flour three to four times, stir with chopsticks at the same time, knead the dough into a ball with your hands, then dip your hands into cold water and mix it onto the dough. Let the dough cool down. After the dough is kneaded, let it rest for 15 minutes while cooling down.
3. Tear the dough into dough pieces the size of table tennis balls, apply oil on the chopping board, roll the dough into thin sheets, put a little oil in the middle of the two pieces, and stack the two pieces on top of each other. Together, use a rolling pin to press out marks to secure.
4. Heat the pan until you can feel the temperature by placing your hand on top of the pan. Add two pieces of noodles over low heat, wait 2-3 minutes and turn them over, wait another 2-3 minutes, and then cook. Just tear the two sides of the pot apart with your hands.
