Steps
1. Prepare all ingredients.
2. Scrape and wash the pig ears, blanch them in cold water and let them cool down.
3. Put the old brine into a pot and heat over low heat to defrost.
4. Add appropriate amount of water and add the pig ears.
5. Add the braised ingredients package.
6. Add onion and ginger.
7. Pour in rice wine.
8. Add dark soy sauce.
9. Add rock sugar.
10. Bring to a boil over high heat and skim off the foam.
11. Simmer over low heat for 40 minutes and then add salt to taste.
12. Turn off the heat, cover and simmer for 20 minutes.
13. Take out and cool slightly, cut into shreds and serve.
Tips
