My husband's sister married in Guanyun, Lianyungang, which is the most representative place of Doudan, and made me realize what is rare in China and unique to Guanyun-Doudan.
I remember the last time my sister made us a pot of processed bean Dan, and I brought some back to my mother's house. At first, my mother said that this is not the big green bug on the soybean leaves that we saw when we were young.
But this big green bug always costs thousands of dollars a plate, which is really expensive to have no friends! Why is this seemingly worthless thing incredibly expensive?
It turns out that Doudan is a natural and pollution-free insect, and its body is similar to that of a silkworm, and it eats soybean leaves or acacia leaves.
Nowadays, with the rapid development of economy, people's living standards are gradually improving, not only in food, but also in eating well and pursuing better.
Doudan is expensive because it is natural, organic, low in fat and high in protein, and its pulp is nontoxic and harmless. Rich in nutrition, the practice of pouring bean Dan in the cloud is delicious and beneficial to all aspects of the body. It is still a delicious food worth trying.
So how to make bean Dan?
This is what my sister told me about their local traditional practice. First of all, there are two ways to treat bean sprouts. One is to soak live bean sprouts in cold water, and the other is to burn them with hot water.
Wait until Doudan floats straight on the water, then roll out the soaked Doudan's internal organs from beginning to end with a rolling pin, and rinse the feces with clean water.
You will find that clean meat is bluish white, not as terrible as the big green bug.
Stir-fry onion, ginger and garlic in a pot, and add bean sprouts to stir-fry. You can add some shredded red pepper to enhance the flavor. Take out the fried bean sprouts, then heat your favorite side dishes such as loofah or cabbage in a hot pot and add some water.
? After the pot is boiled, add the fried bean paste, add the right amount of salt and chicken essence, a little sugar and a little more black pepper, and a dish of delicious bean paste is ready.
Another simple method is to stir-fry shallots, ginger and garlic in a hot pot, then add some red peppers, and stir-fry the washed green vegetables with long leaves in the pot.
Add the washed bean paste, add salt, chicken essence and pepper, and simmer for a few minutes. Finally, take the dish out of the flat bottom with chopsticks and pour the bean paste and soup on the dish.
When cooking bean paste, be sure to leave the soup in the pot. It is really delicious.
Although the existing artificial breeding bean Dan in Guanyun has applied for a patent, the technology is still not mature. Bean Dan only grows in summer, so it is rare.
