1. Cut the goose into pieces and wash.
2. Prepare the seasoning.
3. Prepare light soy sauce, dark soy sauce and beer.
4. First blanch the goose meat in cold water, then pick it up and wash it.
5. Pour oil into the pot, add star anise, ginger and green onions and saute until fragrant.
6. Add the goose meat and stir-fry until the meat is fragrant.
7. Add light soy sauce and dark soy sauce and stir-fry until the goose meat is fully colored.
8. Pour in beer.
9. Add rock sugar and dried chili pepper.
10. Cover and bring to a boil over high heat, then turn to low heat and simmer until cooked and crispy (about an hour).
11. Then taste it and add salt to taste.
12. Turn to high heat to collect the juice, then turn off the heat and remove from the pot.
13. Pour into a bowl and sprinkle with chopped coriander and serve.
