For a long time, there has been a saying in Guanzhong area that "the face of Ganzhou Guokui Qishan is the revolution of Qin Zhen around Chang 'an". It can be seen that Qin Zhen rice skin, Ganzhou Guokui and Qishan noodles with minced meat have long been called the three famous pasta in Guanzhong area.
Qin Zhen, namely Qin Dou Town, is the easternmost town in Huxian County. In the Book of Songs, it was named Fengyi and Fengjing successively, and was called "Fengjing Sheng Di" in history. During the post-Qin period, Emperor Yao Xing often led officials from the capital Chang 'an to Caotang Temple to listen to Kumarajiva's lectures. In order to facilitate communication, a ferry-"Qin Dou" was set up on the west bank of Fenghe River. The first 10 1 book of ancient and modern books records that "Qin Dou is the land rich in ancient times, the west bank of geomantic omen, and the old city rich in Yanzhi". Song Zhi of Chang 'an, named Qin Dou Town, has been in use ever since. During the Song and Yuan Dynasties, there were slight rudiments of existing towns. Qin Dou Town is recorded in the history books of the Ming Dynasty: "There are many merchants in Shanxi and Henan." .
In the Book of Songs Erya, there is a record of "peeling dates in August and harvesting rice in October" in July, and there is a record of "bumper harvests" in bumper years. There are descriptions of "or rice (rice) or rice, or winnowing or whatever", "the sound of rice" and "the floating of sincerity (the way the heat rises when steaming rice)" in The Adult.
The history of Zhou and Qin Dynasties is connected, which naturally leads to the story of Qin Gui's "Steamed Party" and Li XII. During the Qin Dynasty (2265438 BC+0-207 BC), the imperial court set up literature and history in Xianyang, which also ruled the three auxiliary departments. Sanfu, including Guanzhong counties and a part of Shangluo area, is under the jurisdiction of internal history.
Qin Zhen, namely Qin Dou Town, is located on the west bank of Fenghe River in Huxian County. It used to be the capital of the Western Zhou Dynasty, with mild climate, fertile soil and high-quality rice. The rice skin made of polished rice produced here is famous for its white color, thin and soft tendons, flexibility and refreshing.
Qin Zhen's rice noodles are so famous, mainly because the production of Chili oil is very particular. Add essential oil to pepper noodles, add aniseed such as pepper and fennel, and cook repeatedly. The more you cook, the hotter and more fragrant it is, and the hotter and brighter the spicy oil is. People in Qin Zhen claim that their method of making Chili oil can't be learned by others, so the taste of Qin Zhen rice noodles can't be compared with others. The difference between Qin Zhen rice noodles and Hanzhong rice noodles is mainly in soft and hard ingredients. Qin Zhen's rice noodles are slightly harder than Hanzhong's and are more suitable for some young people and middle-aged people. In Xi 'an, there are many rice noodle operators in Qin Zhen, some are small stalls and some are big shops.
