Practice steps:
1. Pick out the older yellow leaves from celery leaves and wash them.
2. Break the garlic first, and then chop it.
3. Add water to the pot to boil, add a little salt, and blanch the celery leaves. After the water is boiled, blanch the celery leaves until the color turns dark green. Take out the celery leaves and don't cover the pot when blanching, so that the bad taste of celery can be distributed. Cover the pot and blanch it. Celery leaves turn yellow easily.
4. Quickly put celery leaves in cold water, cool them, take them out, and wring out the water with water. After blanching celery leaves, cooling them in cold water can keep the fresh flavor of celery leaves and the color will not turn yellow.
5. Put celery leaves in a container and add minced garlic, Chili oil, sesame oil and soy sauce.
6. Stir well with chopsticks, and serve out.
Tip: When the celery leaves are blanched, adding salt can make the celery leaves greener. Don't cover the pot, it will smell like celery. Cover the pot and blanch it.
