Eating mooncakes is our traditional Mid-Autumn Festival custom. Every August 15th, we go to the lanterns to admire the moon and eat mooncakes. The round mooncake symbolizes family reunion and harmony. There are many ways to make mooncakes. Its main materials include flour, egg sugar and some fillings you like. Mooncakes contain protein, unsaturated fatty acids, vitamin E and other energy, which can soften blood vessels and improve immunity. They are a food suitable for all ages.
1. Five-nut mooncake
Main ingredients: 200 grams of cake flour, appropriate amounts of sunflower seeds, peanuts, walnuts, glutinous rice flour, black sesame seeds, and white sesame seeds.
Ingredients: 120 grams of syrup, 50 grams of peanut oil, 4 grams of alkaline water, 1 tablespoon of maltose, appropriate amount of sugar.
How to make traditional Miao mooncakes:
1. Fry sunflower seeds, peanuts, walnuts and glutinous rice flour in a pot over low heat;

Crush the cooked sunflower kernels, peanut kernels (peeled), walnut kernels, and almonds respectively (or crush them with a mixer) into a large bowl, add cooked black and white sesame seeds, and pour in an appropriate amount of cooked glutinous rice flour, sugar, Mix a little water, 28 grams of peanut oil, and maltose evenly to form a soft and hard filling;
3. Mix syrup, alkaline water, and 22 grams of peanut oil until the color is turbid;

7. Put it into a baking pan and spray water on the surface. Mist, put it in the oven, bake at 160 degrees for about 15 minutes until it starts to color, take it out, cool slightly, brush with egg yolk liquid, and continue baking for about 10 minutes.
How to make traditional old-fashioned mooncakes 2

2. Sieve in the medium flour, and mix by rubbing. Let the soft dough rise for two hours. The dough will be as soft and hard as an earlobe. If it is hard, you can add a little more oil to adjust. The mixed dough will be smooth and smooth. It is malleable and does not produce oil. The dough must be proofed after mixing, otherwise it may crack when baked
3. All the filling ingredients are fried, peel the peanuts and dry them with a rolling pin, and chop the walnuts. Crush the rock sugar into small pieces, cut the winter melon sugar into small pieces, soak the raisins in high-strength white wine, mix all the ingredients except the oil evenly, then add the oil in batches until it can be rolled into a ball by hand, and the oil You don’t need to add all the flour and sugar. You can add sugar according to your preference, or you don’t need to add it, because many things in it are sweet. Pay special attention here, and be sure not to get wet.
