One round eggplant, one sharp pepper, one king oyster mushroom, 100g fresh meat filling (2 taels), salt, cooking wine, umami light soy sauce, and MSG.
1. Make the noodles well, as shown in the picture below.
2. Clean the eggplant.
3. Crush the eggplant and lean meat with a mixer, put them into a bowl and set aside.
4. Add dark soy sauce, salt, green onion and ginger to the meat filling and mix thoroughly. Pinch off the excess water from the eggplant and put it into the meat filling.
5. Mix the fillings evenly, as shown in the picture below.
6. Add peanut oil.
7. Continue to stir evenly, as shown in the picture below.
8. Cut the dough into small pieces and roll it into a round dumpling wrapper.
9. Put the fillings on the dumpling wrappers.
10. Just pinch with both hands.
