There are many kinds of tea smashing in China. The raw materials, methods and tools of our new dry tea-broken tea are relatively simple. The production method is also very simple. If it is fresh and old tea just picked, stalk the old tea. If it is dry tea, soak it in clear water for 3-4 hours after removing stems, and then put the washed old tea leaves into a bowl. Bowls and sticks are tools for smashing tea. Bowl is a kind of pottery, which looks like a washbasin and has radial grooves on its inner wall. This is to make the tea and the bowl fully rub and make the tea sesame fully ground into a paste. The rolling pin is a long stick made of pine or fir, with a cylindrical lower end and a length of about 1-2 meters. When the washed old tea leaves and sesame seeds are put into the bowl, add salt and a little water, and the rolling pin rotates clockwise along the inner wall of the bowl, and the tea leaves begin to be rolled. Making tea is a laborious job, which requires a lot of effort. When I was a child, my parents took turns making tea, which took about 1-2 hours. Tea leaves and sesame seeds are fully ground into paste before being served. What is served is called tea residue, because grinding tea leaves is more laborious. Usually grind a big bowl at a time. Take some tea dregs when you want to drink, add well water in summer and boiled water in winter. The storage time of tea residue depends on the temperature and the salt content in it. There is more salt, so it can be stored at low temperature for a long time. Generally, it can be stored at room temperature for 2-3 months in winter. If you don't need a refrigerator in summer, you have to soak in well water and change the water every 2-3 days. It can be stored for about half a month to a month. Now that you have a refrigerator, you can store it for 2-3 months in summer.

Every time she makes Lei tea, when I am at home, she will ask me for a bowl, bring my favorite fried rice, chew Lei tea and listen to her grandmother tell me some recent things in the village.
