Old wine, new wine with heavy tannins, wine aged in oak barrels and wine with peculiar smell or sediment all need to sober up.
What red wine needs to sober up?
What wine needs to sober up?
1, old wine.
Usually, tannins, tartaric acid and polyphenols will polymerize and condense in the aging process of old wine, thus forming precipitation. This kind of sediment will bring roughness and numbness to the mouth, so sober up and remove the sediment. Usually, the hangover time of old wine is short, which is not suitable for a long time to sober up, just like the old man can't stand a long toss.
2. Wine grape varieties have heavy tannins and newer years.
For example, most wines made from grapes with heavy tannins, such as Cabernet Sauvignon, Syrah, malbec and Nebiolo, need to sober up when the New Year comes. Because when I was young, these varieties of tannins were thick and rough, not delicate enough, just like a young man needs to be tempered (sober up) to become round and smooth.
3. Bad wine.
Odor usually refers to odor reducing substances such as rotten eggs and sulfur, which often appear on some cheap wines. Because the grape fruit maturity and sanitary conditions for brewing these wines are not particularly ideal, the winery will add relatively more sulfur dioxide to kill bacteria, which will easily make the wine smell.
4. Wine aged in oak barrels.
Whether red wine or white wine is aged in oak barrels, most of them need to sober up. The newer the oak barrel or the longer the aging time, the longer the wine sobers up. Because oak barrels will give wine tannin and aroma, it will increase the tannin content of wine and the heavy feeling of wine body.
Ordinary red wine, such as 100 yuan wine, ordinary table wine, does not need to sober up, generally it is no problem to drink it immediately after opening the bottle.
For some high-quality wines, they need to be aged before they are suitable for drinking (usually more in the old world, such as the top wines in Bordeaux), but the new year's red wine is green because the tannins in the wine have not been blended, so it is necessary to pour the wine into the decanter to increase its contact with the air, which makes the tannins more supple and easy to drink. According to different wines, the time is generally 30 minutes to 2 hours.
For an old red wine that has reached the drinking period, it generally can't stand a long time to sober up. If it takes too long, the aroma may disappear. Therefore, although this wine should be poured into the decanter, strictly speaking, it should not be called "sobering up" but "decanting wine", that is, it only plays the role of filtering the sediment of old wine by changing bottles. Carefully pour the wine into the decanter for bottle filtration, and then pour it into the cup for tasting or enjoying, without waiting.
Usually, white wine with fresh flowers does not need to sober up and can be drunk immediately. It is best to open the bottle before drinking sweet white wine and expensive rotten sweet white wine 1 hour, but it is not necessary to pour it into the decanter to let the bottle stand up and breathe.
