Stir-fried small intestines
Ingredients:
200 grams of pig intestines, 10 grams of winter squash, 10 grams of ginger, 10 grams of green onions, and 10 grams of garlic.
Seasoning:
30g peanut oil, 10g salt, 8g MSG, 3g sugar, 10g dark soy sauce, 5g sesame oil, a little pepper, wet cornstarch 20 grams, clear soup 50 grams.
Operation:
1. Wash and cut the pig intestine into strips, cut the winter squash into strips, slice the ginger, cut the green onion into sections, and cut off both ends of the garlic.
2. Heat oil in a pan, add ginger slices, garlic, winter squash, and small intestine and stir-fry until water dries up.
3. Add clear soup, add salt, monosodium glutamate, sugar, dark soy sauce, and pepper until the juice is thick, thicken with cornstarch, and pour in sesame oil.

Braised small intestines
1. One pound of pig small intestine. After buying it, wash it carefully with vinegar and pepper to remove the smell.
2. Cut into 1.5 cm pieces.
3. Add star anise, ginger and salt to the pot, add small intestine segments and boil for about 5 minutes. Removes oil from the small intestine.
4. Remove the small intestine and purify the water.
5. Put oil in the pot, add sugar, and simmer over low heat until the sugar turns brown.
6. Add the small intestines and stir-fry over high heat.
7. Add chili, soy sauce, chicken essence, minced green onion and minced garlic. stir fry.
8. Add a little water and simmer over low heat. Collect the dry soup water. But I still saved some of the soup for serving with rice, it was absolutely delicious.
