working methods
1. Soak the vermicelli in water for later use. Fish are packed, scaled and eviscerated.
2. Put oil in a hot pan and fry the fish until golden on both sides. Pour vinegar and cooking wine to remove the fishy smell, then add onion, ginger, garlic slices, soy sauce, sugar, salt, pepper aniseed, pork belly, water and fish, first boil with high fire, then simmer slowly.
