Methods/Steps

Soak the lamb in water with some cooking wine for two hours

Clean it well, cut it into thin strips, and cut the fat and lean meat separately

Pierce the skewers with a skewer, and put two pieces of fat meat on each skewer, spacing out the fat from the lean

Put them in the middle of the oven, upper and lower heat, and bake at 220 degrees Celsius for 10 minutes, and then bake at 200 degrees Celsius for 10 minutes, turning them over half way through, and brushing the marinade once more
