Mainly look at bean sprouts stalks, bean sprouts roots and beans. Naturally cultivated bean sprouts are slightly thinner and straight, and the bud feet are not soft and shiny; The bean sprouts produced by chemical fertilizers are thick and watery, and the color is gray. The roots of naturally cultivated bean sprouts develop well without rotting roots and tips, while the roots of bean sprouts soaked with chemical fertilizers are short, few or no roots. Naturally cultivated bean sprouts, beans are normal, while bean sprouts soaked in chemical fertilizers are blue, and individual cotyledons are green and blue.

For the normal development of bean sprouts, there are also some selection skills. At present, there are mostly two kinds of soybean sprouts and mung bean sprouts on the market. For soybean sprouts, it is best to eat them when the fibrous roots are not growing, and you can fry them or make soup, while mung bean sprouts are best when they grow to 4 ~ 5 cm. From the color point of view, soybean sprouts are best yellow. The mung bean sprouts are preferably light yellow. From the point of view of the location of purchase, you should also go to supermarkets, vegetable shops or bazaars to buy, and try not to buy from some mobile vendors.
Take off the bright coat of dyed green beans
Green bean is the tender fruit of soybean (soybean), which is rich in protein and calcium, and contains many amino acids necessary for human body, especially lysine. Green beans also have the functions of strengthening the spleen, widening the middle energizer, moistening dryness and eliminating water, so they are quite popular with people. However, some unscrupulous traders want to make money. The overstocked "aged green beans" or soybeans are processed into green beans by adding pigments. So, generally speaking, what raw materials do vendors use to dye beans?
1. food pigment
Edible pigments can be divided into two categories, one is natural pigment and the other is synthetic pigment. Natural pigments mainly include monascus, chlorophyll, carotene, etc. Although these pigments are less toxic or non-toxic, they are light in color, large in dosage and expensive. However, artificial pigments are widely used because of their strong coloring power, bright color, rich colors and low cost. Generally speaking, the country is allowed to use edible pigments (including natural pigments and synthetic pigments) for dyeing, but the dosage should be controlled.
Therefore, if vendors use food pigments to dye beans, it doesn't matter, as long as the amount used in dyeing is small, at least not beyond the national standards. However, because the price of food pigment is relatively high and the dyeing operation is complicated, compared with the green beans with relatively low selling price, ordinary vendors will not use food pigment to dye beans.
2. Industrial pigments
Generally speaking, in order to save costs, illegal traders will use industrial pigments to dye beans, which is why green beans will turn green after being soaked, and there is a strange smell. This kind of industrial pigment used by vendors for dyeing is called "fruit green", which is a kind of high concentration, high chroma, non-biodegradable and toxic industrial dye. It is an artificial colorant mixed with lemon yellow and bright blue, and it is the same as "Sudan red" which is banned from being added to agricultural products by the state. Because the price of "fruit green" is lower than that of some natural edible pigments, the dyeing effect is more obvious, and it also has the magical effect of making a catty of beans swell to about two catties, so it is frequently used as a dyeing raw material by some unscrupulous traders.
Harm of dyed green beans
If we eat dyed green beans, what bad effects will it have? Is it harmful to our health?
1. influence of food pigment
Generally speaking, edible pigments are basically non-toxic or less toxic, so long as the dosage is controlled, it will not endanger health. However, even if the pigment content in a certain food is qualified, eating a large number of foods containing the same pigment in life may still lead to the excessive intake of pigment and bring harm to health. Excessive intake of food pigments can also lead to chronic diseases, such as cell mutation and leukemia.
For security reasons. China has strict regulations on the dosage and usage of artificial pigments. At present, there are six varieties of edible synthetic pigments approved for use in China, namely amaranth, carmine, lemon yellow, sunset yellow, indigo and brilliant blue. Although the harmfulness of these six kinds of edible synthetic pigments is still inconclusive, it is certain that they have no nutritional value and are not helpful to human health, so try not to eat them if you can. However, some unscrupulous traders only want to make profits, regardless of the health of consumers, add pigments at will, some even don't know the dosage of pigments, and some abuse pigments to cover up the color of expired and spoiled foods. These situations will seriously endanger our health.
2. Harm of industrial pigments
According to the national regulations on the use of pigments, industrial pigments are absolutely not allowed to be used as food additives, nor are they allowed to be used as food colorants, otherwise the consequences are often fatal. Therefore, if illegal traders use industrial pigment "fruit green" to dye beans, such green beans are absolutely inedible, otherwise it may have carcinogenic and teratogenic effects.
