Exercise:
1. First cut cuttlefish slices with a knife about half a centimeter wide. Don't cut the cuttlefish, just cut the top 1/2 and leave the top1/2;
2. Then vertically cut strips half a centimeter wide on the cuttlefish slices, and this time cut them all to the bottom to make them look like gear strips;
3. Wash the cabbage and cut into pieces, shred the ginger, remove the seeds from the red pepper and cut into rings;
4. Pour clear water into the pot, bring it to a boil with high fire, add a little cooking wine, put the cut cuttlefish strips into blanching water 15 seconds, then take them out and drain them;
5. When the pot is hot, pour the oil in. When the oil is 40% hot, add shredded ginger and stir-fry for half a minute.
6. Add cuttlefish strips and stir fry 10 second, add sugar to taste, stir fry a few times and take out the pan.
