Caijie is a common traditional snack in Guanzhong area of Shaanxi Province. Vegetable knots usually include shepherd's purse, alfalfa, potato (called potato fork in northern Shaanxi) and acacia.
Shaanxi and Shanxi used to eat a kind of pasta called "vegetable bumps". It is said that this is a forced eating method of "half-year-old grain bran vegetables" in the past, because it can make full use of various raw materials-white flour, sorghum flour and soybean flour can be mixed, such as yam eggs, fennel, Chinese cabbage, carrots, eggplant, beans and spinach.
