Marinate for two to three days
As the name suggests, salty pig's trotters taste like "salty". Generally, salted pig's trotters are boiled in boiling water before being pickled, so generally marinating for two to three days is enough. The pickling process is as follows:
1. Remove the bones from the pig trotters, wash them with warm water and drain them.
2. Stir in coarse salt and peppercorns and wait until fragrant.
3. Evenly rub the fried peppercorns and salt all over the pork knuckles, and then rub a small amount of white wine.
4. Put it in the refrigerator for one night. It is best to put a heavy weight on the pig's hand to squeeze out the moisture and make the meat more delicious.
5. Take it out and hang it up the next day, and put it in the air vent for one to two days.
6. Add water and ginger slices to the pork trotters.
7. Simmer over low heat for one and a half hours, take out and cut into thick slices, then add black fungus and green vegetables.
