Step 1: Prepare ingredients. Two trotters, appropriate amount of rock sugar, appropriate amount of ginger, two pieces of fragrant leaves, two pieces of star anise and two pieces of dried Chili.
Step 2, add a proper amount of water to the pot, then add pig's trotters and add a little cooking wine. After the fire boils, cook for another three to five minutes, so that the impurities in the pig's trotters are fully cooked. Then remove the pig's trotters for later use.
The third step is to stir-fry the sugar color. Pour an appropriate amount of cooking oil into the pot, then put the rock sugar into the pot and stir fry over low heat.
Step 5, put the pig's trotters into the pot and stir evenly.
Step 6, put ginger slices, dried peppers, fragrant leaves and star anise into a pot and stir-fry evenly.
Step 7: Cook a spoonful of cooking wine along the edge of the pot, and then pour in a little soy sauce to color it.
Step 8: Add proper amount of hot water and salt. You can add more water because it takes a long time to stew. After the fire boils, turn to low heat and stew for about an hour and a half.
Step 9, collect the juice. And put it on a plate.
