1. Wash the carrots, cut them open, and cut them into slices with a diagonal knife.
2. Turn on the heat and add peanut oil and carrots to the pan.
3. Stir-fry the carrots gently over low heat until they become soft and red carotene gradually oozes out.
4. Add minced garlic and stir-fry for a while, then pour in a little hot water, stir-fry briefly, cover the pot and simmer.
5. After simmering for about 2-3 minutes, the carrots will be soft enough to produce juice. Stir-fry over high heat for a few times and it is ready to serve.
