1. Wash the eggplant.
2. Peel off the skin.
3. Cut the eggplant into the shape you want.
4. Sprinkle a spoonful of salt on eggplant.
5. Stir the salt and diced eggplant evenly.
6. After waiting for half an hour or so, the eggplant will ooze a lot of water.
7. Squeeze out the oozing water by hand.
8. A fresh eggplant can squeeze out half a bowl of water.
9. Eggplants squeezed through the water have obviously faded a lot.
10. Chop the onion and ginger, divide them into two halves, half of them will be used in the wok and the other half will be put in the fish-flavored sauce later.

16. Stir-fry for three to four minutes and then add the green pepper.
17. Add the green pepper, then pour in the prepared fish-flavored sauce seasoning and stir-fry for a while.
18. Add minced garlic before taking out the pot.

When frying Pixian Chili sauce, you must use a small fire, otherwise it is easy to fry the pepper. Green pepper is rich in vitamin C, so it is recommended to put it when you are out of the pot, which can preserve nutrition. When processing eggplant, salt has been added. Pixian Chili sauce itself is salty, so don't add salt when cooking.
