Air fryer can't make chiffonade.
The recipe is as follows:
Step 1
Make the cake flour: Put 60g of glutinous rice flour into a pot and stir-fry over low heat until cooked. Set aside.

How is the glutinous rice flour cooked? It's hard to describe, but you can smell the flavor and see the color, and the general color will be slightly yellow, and the state is slightly lumpy, as shown in the picture.
Step 3
The next step is to make the skins of the waffles: melt the sugar in hot water and mix it into the milk, then add it to the glutinous rice flour and cornstarch and stir the batter.
Step 4
The batter will have chunks of powder, so strain through a flour sieve.

Strain the batter and steam it in a pan over high heat for 30 minutes or microwave on high for three to four minutes.

Melt the butter into liquid form, either over water or in the microwave.

Add the liquid butter to the steamed batter and mix well, stirring with relative effort, or just knead it with your hands, then put it in the freezer for half an hour to cool down.

While you're waiting, whip the light cream with the powdered sugar.

Place the Oreo cookie crumbs in a grinder.

Grind to a fine powder.

Use a spoon to scoop up a ball of dough of about 30g. Many people will say that the dough is sticky, I purposely photographed this step, the dough is very elastic, but not very sticky, the correct state of the dough should be like this.

Place the dough into the flour and roll it around. Prepare a small bowl (the kind with soy sauce and vinegar).
Step 13
Push the dough with your fingers to form a round sheet. Or use a rolling pin to roll it into a thin sheet and put it into a small bowl.
Step 14
Put a small spoonful of cream and add some Oreo powder and some more cream.
Step 15
Close the edges to the center and pinch tightly.
Step 16
Invert the white fat from the bowl and take a greaseproof paper tray to place it.
