Choose fresh fat sausage, it will not be fresh if it is left for too long. No matter how you wash it, there is an unpleasant "strange smell". So be sure to have fresh fat sausages or frozen ones, otherwise you'd rather not have them. Remember this. Then put the fat sausage in a pot, soak it in warm water for 10 minute, rub it when it is soft, and pour out the dirty water.
The second step: cleaning.
Pour in half a spoonful of flour and a little white vinegar and knead directly. After washing the outside, turn the fat sausage over, rub it inside, and then rinse it under running water. Then rub it again in the same way and rinse it off. The purpose of this step is to wash away greasy mucus, as well as impurities and dirt left in the fatty intestine.
Step 3: remove the fishy smell.
The fat sausage itself has a "smelly" taste. In fact, this is mainly caused by the oil in the fat sausage. Just turn the fat sausage over and tear off the oil inside. In particular, large chunks of fatty oil not only have a strong smell, but also affect the taste. Some people can't eat fat intestines because of these chunks of fat.
Step 4: blanching.
Clean the fat sausage, put it in a pot with cold water, add pepper, ginger slices and onion segments, and then pour in cooking wine. Boil the boiling water for a few minutes (not too long), then take it out and rinse it with cold water. This can not only remove the fishy smell, but also keep the crispy taste of the fat sausage.
