How to Make Sauce on Chicken Fillet Rice
Ingredients 2 tbsp soy sauce, 2 tbsp oyster sauce, 2 tbsp rock sugar or maltose, pinch of five-spice powder, 1/4 tsp pepper, 3 and 1/2 cups water, 1 tbsp wine, 12 cloves garlic Directions Heat 2 tbsp oil in a saucepan. Fry the garlic until golden brown, then remove. In a separate saucepan, bring all other ingredients to a boil, add (1) clove of garlic and simmer until thickened. Wash and drain meat, marinate with soy sauce and sugar for 1~2 hours. Brush with B.B.Q. BBQ sauce and grill. Teriyaki Sauce Ingredients 1/2 tbsp soy sauce, 1 tbsp oyster sauce, 1.5 tbsp sugar, 1/3 tsp sesame oil, 1 tbsp each cornstarch and water, 1.5 cups water, pepper and salt. Directions Boil 1.5 cups water, add all ingredients and thicken with cornstarch until thick. Sesame Sauce Ingredients 3 tbsp each of sesame sauce, black pepper paste, honey, 1 tbsp each of oyster sauce and wasabi paste. Directions Mix well (can be thickened with water or cooking wine). Remarks Suitable for: seafood, skewers, meat barbecue sauce. Mid-Autumn BBQ Sauce Ingredients 4 tbsp tomato sauce, 2 tbsp seafood sauce, 1 tbsp French mustard, 1 tsp each vinegar, olive oil, cayenne pepper, diced onion, minced garlic, black pepper to taste, 1/2 tsp each salt, sugar. Directions Mix well. Wagamama Sauce Ingredients 2 tbsp soy sauce, 1 tbsp each cooking wine and ketchup, ginger, onion puree, lemon juice. Directions Stir well. Remarks Suitable for: fruits, vegetables, and meat. Peanut BBQ Sauce 2 tbsp pineapple juice 1 tbsp coconut milk 1 tbsp peanut butter 3 tbsp minced garlic 1/3 tbsp minced ginger 1/3 tbsp minced onion 1/2 tbsp curry powder 1 tsp soy sauce 1/2 tbsp sugar pinch of salt pinch of black pepper Mix all ingredients well. Use as a barbecue sauce for skewered foods or as a dip for fried meats. Scallion Sauce 1 tbsp rice wine 2 tbsp soy sauce 2 tbsp oyster sauce 2 tbsp rock sugar 2 tbsp tomato ketchup 2 tbsp green onions 1/2 cup water 1 cup frying pan, bring all the seasonings to a boil, then simmer a little bit until thickened, then you will have a very flavorful scallion sauce. The sauce is delicious on chicken thighs, roasted meat, or as a dip. It can be used as a barbecue sauce, as a dip or as a stir-fry for vegetables.
