1. Choose a clean porcelain teapot and high-quality water. The water should be mountain spring water or filtered cold boiled water, and the water temperature should not be too high, preferably around 85℃.
2. According to the size and personal taste of the porcelain teapot, add an appropriate amount of aged Tieguanyin tea (about 6 grams is recommended).
3. Pour in hot water and let the tea soak for 5 to 10 second to release the aroma and taste.
4. Pour out the first sip of tea water. This step is called "washing tea". The purpose is to remove impurities from aged Tieguanyin tea and make the tea more pure.
5. Pour the hot water into the teapot again and soak the aged Tieguanyin tea for about 30 seconds, which is called "serving tea".
6. Pour the tea into the teacup and adjust the temperature, preferably between 60℃ and 70℃.
7. Taste the aged Tieguanyin, smell it first, then taste it, and experience the aroma and taste of tea.
8. Continue brewing until the aged Tieguanyin tea loses its original flavor or the tea soup becomes shallow, and water or tea can be added as appropriate.
9. After tasting, clean the tea set, so as not to leave odor that will affect the next tasting.
