Use a rolling pin to pound the flaky butter into thinner and larger pieces until it has good ductility. Use a knife to cut a cross on the surface of the relaxed dough, then roll it out along the sides, spread the thinly rolled butter in the middle of the dough, fold up the four corners, and pinch to seal.
2. Roll the dough wrapped with flaky butter into a long strip horizontally, fold in 3/8 of the left edge of the dough, and fold in 1/8 of the right edge of the dough. , and then fold the dough in half to complete the fourth fold. Turn the dough 90 degrees and roll it out again. Fold the left and right sides inward by 1/3 to complete a three-fold fold. After folding twice, put the dough in the refrigerator for more than 1 hour. 3. Take out the refrigerated dough and roll it out to a thickness of 3mm. Use a sharp knife to cut off the corners. Take a 50cm long piece of puff pastry, brush it with a layer of water, sprinkle with fine sugar, and cut it about 1/2 from both sides. Fold 6 points inward twice, leaving a gap of about a finger in the middle. After thinning the gap, fold the pastry in half and press it tightly. Send it to the refrigerator to freeze for about 30 minutes, take it out and cut it into 8mm thick, and place it in a baking pan.
