Shrimp cakes were first popular in Jiangnan. As a traditional snack in Changzhou City, Jiangsu Province, shrimp cakes are the most famous. In Changzhou, shrimp cakes are also called "copper drum cakes" because they are wrinkled like waist drums.
Shrimp cakes have a history of nearly 200 years. Yuan Mei, a litterateur in Qing Dynasty, wrote in "Suiyuan Food List": "Shrimp cakes, raw shrimps, onions, salt, pepper, a little sweet wine, water and flour, sesame oil will burn thoroughly". Golden color, crisp outside and soft inside, fragrant and delicious.
