1. Ingredients: 1 tomato, 1 egg, 1 handful of spinach, 1 green onion.
2. Wash and select the spinach, and blanch it in a pot of boiling water (after the water boils, add the spinach and pick it up after 1 minute). Blanching can remove most of the oxalic acid in spinach.
3. Wash the tomatoes and cut them into small pieces, mince the green onions, and beat the eggs and set aside.
4. Put oil in the pot, add tomato cubes and minced green onions, stir-fry over medium heat until tomatoes become soft and juice comes out, add appropriate amount of boiling water and cook for 2-3 minutes.
5. Add the egg liquid and stir with chopsticks while adding to spread the egg liquid.
6. Immediately add spinach and appropriate amount of salt, cook for 1 minute and serve.
